Masa - the base of corn tortillas - is basically cornmeal that has been processed in a way that makes the vitamin content more usable. I use the brand Maseca, which my grocery store stocks next to the flour in a similar size bag for about the same price. Using masa in cornbread gives it a softer texture and a bit of tortilla flavor for an interesting twist.

1 cup(s) all purpose flour
1 cup(s) instant masa (such as maseca)
2-4 tablespoon(s) sugar
1 tablespoon(s) baking powder
1/2 teaspoon(s) salt
2 large eggs
1 cup(s) milk
1/4 cup(s) vegetable oil
1 can(s) whole kernel corn, drained
1 tablespoon(s) butter

Steps:

  • Preheat the oven to 425. If you’re planning to bake your cornbread in a cast iron pan, put the pat of butter in the pan and put it into the oven to heat up. If you’re using a regular baking pan, grease the bottom and 1/2 inch up the sides.
  • Combine flour, masa, sugar, baking powder and salt in a medium bowl.
  • In a small bowl, combine eggs, milk and oil.
  • Add liquid ingredients to dry ingredients all at once, stirring as little as possible to combine well.
  • Gently fold in corn.
  • Pour into prepared pan, smooth top of batter and bake 25 minutes for a square pan, a bit longer for cast iron, until a toothpick inserted near the center comes out clean.

6 tbsp. Butter
1 1/2 c. Masa Harina
1/2 c. All-purpose Flour
2 tbsp. Baking Powder
1 tsp. Sea Salt
1 1/3 c. Whole Milk
1/4 c. Pure Maple Syrup
2 Large Eggs
Extra Butter And Maple Syrup, For Serving

Steps:

  • Preheat oven to 425ºF. Place the butter in a 9x9-inch square glass baking dish and put in the oven to melt. Keep an eye on it so it doesn't burn!Meanwhile, in a medium bowl, whisk together the dry ingredients.Measure out the milk and maple syrup in a 2-cup liquid measuring cup. Add eggs and whisk well with a fork. Gradually add melted butter to the milk mixture, making sure to leave 2 tablespoons in the bottom of the baking dish.Add the wet ingredients to the dry ingredients and whisk just until the flour is all moistened. Scrape the batter into the buttered baking dish and spread it out with a spatula. Bake in preheated oven for 20–25 minutes, or until the edges are beautifully golden brown and a toothpick inserted in the center comes out clean.Serve hot with butter and maple syrup.

  • Mix dry ingredients. Rub half of butter (2 T) into dry ingr., Put the other half in a cast iron skillet in a 425 oven. Add eggs and enough milk to dry ingr to make a batter (takes more than regular cornmeal bread), around 1.5 c. When butter in skillet is melted, spread out batter and bake until brown around edges and light brown areas on top (20 min?). Cool out of the pan if you want to keep the bottom crust crisp.

  • I've been storing leftovers in a Ziploc in the fridge and it's still good after a few days. Here's my quick re-heating method for a big slice: Add a slice of butter to a skillet over medium heat. Dredge all sides of the cornbread in the butter and then cook each side until it is just starting to brown -- it will take a few minutes and this is usually enough to heat it through, plus you get some crispy edges ;)
