Ice
2 1/2 oz. vodka
1/2 oz. dry vermouth
Green olive or strip lemon zest removed with a peeler, for garnish

Steps:

  • Optional: Freeze martini glass 15 minutes before making the drink.
  • For a shaken martini: Fill a cocktail shaker with ice. Add the vodka and vermouth and shake until well chilled. Strain into a martini glass, garnish with olive or lemon peel, and serve.
  • For a stirred martini: Pour the vodka and vermouth into a  mixing glass or cocktail shaker filled with ice. Stir vigorously, about 20 seconds, until well chilled. Strain into a martini glass, garnish with olive or lemon peel and serve.

    1. Preheat the oven to 180C/350F/gas 4.
    2. On a chopping board, cut the aubergines in half lengthways.
    3. Score the flesh sides in a crisscross pattern, making sure you don’t cut through the skins.
    4. Drizzle with 2 tablespoons olive oil, then toss to coat.
    5. Arrange on a baking tray, flesh-side facing up, then bake in the oven for around 45 minutes, or until soft.
    6. Using oven gloves, remove the aubergine from the oven, then leave aside to cool.
    7. Peel and roughly chop the garlic, then place in a food processor.
    8. Add the tahini, chilli powder (if using), cumin, 2 tablespoons extra virgin olive oil and the aubergine, discarding the skin.
    9. Cut the lemons in half. Squeeze in the juice, using your fingers to catch any pips.
    10. Secure the lid and blitz to a nice thick dip.
    11. Have a taste and add a tiny pinch of salt and pepper, if you think you think it needs it.
    12. Transfer to a bowl, to serve.

ON THE DAY Roughly chop the tomatoes and place in a blender with ½ a chilli. Tear in the basil, reserving a handful of nice baby leaves. Add 4 tablespoons of red wine vinegar, 2 tablespoons of water and a pinch of sea salt, then blitz until smooth (work in batches, if needed). Pour the mixture through a coarse sieve into a deep enamel tray or bowl. Season to perfection, tasting and tweaking, then stir in the couscous, cover, and leave to rehydrate in the fridge for 1 hour. Meanwhile, preheat the oven to 180°C/350°F/gas 4. Trim the baby courgettes and halve lengthways, placing them in a baking tray as you go. Peel the garlic, slice with the remaining chillies and add to the tray, then squash, destone and tear in the olives. Drizzle with 1 tablespoon of olive oil, lightly season and toss together. Rub the feta with a little oil, then place in the centre of the tray and roast for 30 minutes, or until everything is lightly golden. Mix up the couscous, scatter over the courgettes, garlic, chilli and olives, crumble over the feta, sprinkle with the reserved basil leaves, and drizzle with 1 tablespoon of extra virgin olive oil. This will be delicious served warm or cold.
