- In a large saucepan, combine the first six ingredients; cook and stir over medium heat 8-10 minutes or until marshmallows are melted. Remove from heat; cool to room temperature., Fold in whipped topping. Spoon into crust. Refrigerate 3 hours or until set. If desired, serve with additional whipped topping.

- Grease a 9" pie dish with cooking spray. In a medium bowl, combine graham crackers, melted butter, sugar, and a pinch of salt. Press graham cracker mixture firmly into bottom and sides of prepared pie dish. In a medium saucepan, combine marshmallows, pumpkin puree, and pumpkin pie spice. Place over medium heat and cook, stirring, until marshmallows are melted and combined. Remove from heat and scrape into a large bowl. Let cool to room temperature. Fold whipped topping into pumpkin mixture and scrape into prepared crust. Smooth top and refrigerate until set, about 2 hours. Pipe whipped topping around edge of pie and sprinkle with more pumpkin pie spice.
