Mozzarella Marinara Recipe: How to Make It image

My husband and I enjoy mozzarella marinara at our state fair and though we'd try to make our own version at home. Our recipe calls for convenient egg roll wrappers instead to messy batter. The homemade marinara sauce is fast and flavorful.—Ellen Borst, Genoa City, Wisconsin

Yield 2 dozen (3 cups sauce).

Number Of Ingredients 12

1 small onion, chopped
1 garlic clove, minced
3 tablespoons olive oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (6 ounces) tomato paste
1 cup water
2 teaspoons sugar
1/2 teaspoon salt
1 bay leaf
24 egg roll wrappers
24 pieces string cheese
Canola oil for deep-fat frying

Steps:

  • In a large saucepan, saute onion and garlic in oil. Add the tomatoes, tomato paste, water, sugar, salt and bay leaf. Bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes or until thickened., Meanwhile, place an egg roll wrapper on a work surface with a point facing you. Place a piece of cheese near the bottom corner. Fold bottom corner of wrapper over cheese; roll up just until cheese is enclosed. Fold sides of wrapper over top. Using a pastry brush, wet the top corner with water. Roll up tightly to seal, forming a tube. Repeat., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry mozzarella sticks, a few at a time, for 1 minute or until golden brown, turning occasionally. Discard bay leaf from marinara sauce. Serve with the mozzarella sticks.

Yield 2 servings (serving size: 2 cheese sticks and 2 tablespoons marinara sauce)

Number Of Ingredients 5

4 (3 x 1/2 x 1/2-inch) sticks part-skim mozzarella cheese (about 3 ounces)
2 teaspoons commercial pesto
4 sheets frozen phyllo dough, thawed
Olive oil-flavored cooking spray
¼ cup fat-free tomato-and-basil marinara sauce

Steps:

  • Preheat oven to 400°.
  • Coat cheese with pesto.
  • Cut phyllo sheets in half crosswise to form 8 (13 x 9-inch) rectangles. Place 1 phyllo sheet on a cutting board or work surface (cover remaining dough to keep from drying); coat with cooking spray. Place 1 sheet on top of first sheet. Fold in half crosswise to form a 9 x 6 1/2-inch rectangle. Place 1 stick of cheese at center of a short end of rectangle; fold long sides of phyllo over cheese, coat with cooking spray. Starting with the short end, roll up phyllo jelly-roll fashion. Coat with cooking spray. Place on a baking sheet coated with cooking spray. Repeat with remaining phyllo and cheese. Bake at 400° for 12 minutes or until golden brown.
  • Heat the marinara sauce in a small saucepan over medium-low heat until thoroughly heated. Serve marinara sauce with mozzarella sticks.
