2 cups water
4 small red bell peppers, cut into strips
4 small green bell peppers, cut into strips
6 carrots, pared, thinly sliced
2 medium onions, thinly sliced
1 cup distilled white vinegar
1/4 cup olive oil
1/4 cup chopped fresh ginger
2 bay leaves
1 tablespoon salt, plus additional to taste
1/2 teaspoon crushed red pepper flakes
1/4 cup vegetable oil
8 (6 ounce) red snapper fillets, skinless
3 tablespoons fresh lime juice
fresh ground pepper

Steps:

  • Heat the water, bell peppers, carrots, onions, vinegar, olive oil, ginger, bay leaves, 1 T. salt, and the red pepper flakes in large saucepan over high heat to boiloing. Reduce heat to medium-low and simmer covered until vegetables are crisp-tender, 7-10 minutes.
  • Meanwhile, heat vegetable oil in large skillet over medium-high heat until very hot. Brush fish with lime juice; season with salt and pepper. Brown fillets in batches in oil, about 1 minute each side. Transfer to large heatproof dish.
  • Pour hot vegetables over fish and let cool to room temperature, 1-1/2 hours. Remove bay leaves.
  • To serve, spoon some vegetables onto platter, place fish over vegetables, and top with remaining vegetables. Serve at room temperature.

1 tablespoon sesame seeds
1/2 teaspoon sesame oil
2 tablespoons soy sauce
1 tablespoon white wine vinegar
2 tablespoons ginger, minced
1 tablespoon garlic, minced
1/4 teaspoon cayenne
1 lb red snapper fillet

Steps:

  • Microwave sesame seeds on high about 1 minute.
  • Mix oil, soy, vinegar, ginger, garlic& cayenne.
  • Marinade filets in mixture 10-15 minutes .
  • Arrange filets on plate with thick side out.
  • Cover with plastic wrap and vent in two places.
  • Microwave on high 4-5 minutes until thickest portion is just opaque.
  • Let stand 5 minutes.
  • Sprinkle with toasted sesame seeds.

PAN-FRIED SNAPPER MARINATED IN HARISSA RECIPE | GOOD FOOD
Harissa is a Tunisian/Moroccan chilli paste that can be as simple as dried chillies, spices (including cumin or coriander seeds), garlic and olive oil. In this recipe harissa is used as a marinade, but it's most commonly used as a condiment, perhaps to spice up a tagine, or as an awesome dollop on fried eggs. I've used snapper here, but this recipe works with any white-fleshed fish. Prepare the harissa in advance if it's a weeknight.

  • For the harissa

    1. Carefully dry roast spices in a pan until fragrant, then crush in a mortar with a pestle until finely ground.

    2. Put oil, capsicum and salt in a large fry pan. Cook over a very low heat for about 1½ hours, until very soft and caramelised. Stir often to prevent sticking to base of pan.

    3. Add garlic and roasted spices, and cook for a few minutes until garlic is golden.

    4. Increase heat to medium, add the palm sugar and cook, stirring, for about five minutes until the sugar is caramelised. The mixture should go a reddish-brown.

    5. Add the fish sauce, cook for a minute or two, then add lemon juice to taste. Stir through chilli powder then remove from heat. Cool mixture then blend until smooth.

    For the fish

    6. Take two tablespoons of the harissa paste and marinate the snapper. Leave in the fridge for about 30 minutes.

    7. Heat oil in a non-stick saucepan over medium-low flame. Pan fry the fillets on one side for three minutes then gently turn and fry for another three to four minutes. Remove from heat and put on a plate. Cover with foil and leave to rest for five minutes.

    8. Serve the fillets on the plate and spoon over any juices left on the resting plate.
