Moist, Marble cake with a beautiful pattern. Chocolate and Vanilla flavour baked in a Bundt form. Easy to make yet so beautiful and delicious.

Number Of Ingredients 12

2 cups All-Purpose Flour
1½ cups Crystal Sugar
3 tsp Baking Powder
1¼ tsp Salt
1/2 cup Unsalted Butter
4 large Egg
1 large Eggs Yolks
2 tsp Vanilla Extract
5 tsp Vegetable Oil
1 cup Buttermilk
½ cup Brown Sugar
½ cup Cocoa (unsweetened)

Steps:

  • In a medium size bowl, combine the flour, baking powder and salt. Give it a quick whisk and set aside.
  • In a large bowl, combine the butter and sugar. Using a hand mixer, cream until light and fluffy.
  • Add the Eggs while whisking, one at a time and then the single egg yolk.
  • Gradually add the Vegetable Oil, Vanilla Extract and Buttermilk. Whisk until combined and creamy. If you add the ingredients too fast, the batter might look curdled. This will smoothen out when adding the dry ingredients.
  • Add the dry ingredients 3-4 table spoons at a time and whisk. Stop when everything is smooth, don't over mix to avoid gluten build-up.
  • Separate the batter in to two equal halves.
  • Sift the cocoa into the batter and whisk until combined, then add the brown sugar and fold until combined.
  • Butter and flour your cake form, I am using a Bundt form but a loaf or round form will work just the same.
  • To create a marble pattern, alternate between the light and dark batter adding spoons on top of each other until all the batter is used up.
  • Bake at 170c or 340F for 45 minutes or until a skewer test comes out clean.

This cake is fantastic to have all year long - but I use it primarily in the summer because it's kept refrigerated so it's nice and cool.

Yield 1 - 7x11 inch cake

1 (18.25 ounce) package marble cake mix
1 (3 ounce) package strawberry flavored Jell-O®
1 cup boiling water
1 (1.3 ounce) envelope whipped topping mix
1 (3.5 ounce) package instant vanilla pudding mix
2 cups milk
1 teaspoon vanilla extract

Steps:

  • Prepare and bake marble cake as directed on the box.
  • Poke holes in the cooled cake with a fork. Dissolve the strawberry gelatin in 1 cup boiling water. Pour the gelatin over the cake, and refrigerate for 2 1/2 hours.
  • Combine whipped topping, vanilla pudding, milk, and vanilla in a mixing bowl. Mix with an electric mixer on high speed for 3 to 5 minutes, until frosting is thick enough for spreading. Frost the cake, and serve. Store any leftovers in the refrigerator.

  • Heat oven to 350ºF. Line 12-cup regular muffin tin with paper cupcake liners.Sift flour, salt, and baking powder together. Set aside. Cream butter and sugar until light and fluffy, about 3 minutes. Add eggs, one at a time, mixing until blended, scraping the sides and bottom of bowl as needed. Beat in vanilla and almond extracts. On low speed, add flour mixture in 3 additions, alternating with the 1/2 cup milk, beginning and ending with the flour. Scrape sides and bottom of bowl to ensure flour is incorporated. Remove 3/4 cup batter to another bowl. To the 3/4 cup batter, add cocoa powder and remaining 1 tablespoon milk. Stir until blended.Spoon the vanilla and chocolate batters into the prepared muffin tins. Use a knife or chopstick to swirl the batters gently. Bake for 20–22 minutes or until the tops bounce back when lightly pressed. Cool in the pan for 3 minutes in the pan, then carefully remove to a wire rack to cool completely. Frost as desired.
