6 tablespoons maple syrup
6 tablespoons balsamic vinegar
3/4 teaspoon salt
3/4 teaspoon coarsely ground pepper
4 boneless pork loin chops (1-1/2 inch thick and 12 ounces each)

Steps:

  • In a small bowl, whisk syrup, vinegar, salt and pepper until blended. Pour 1/2 cup marinade into a shallow bowl. Add pork chops; turn to coat. Cover and refrigerate 1 hour. Reserve remaining marinade for basting., Drain pork chops, discarding marinade. On an oiled grill, cook pork chops, covered, over medium heat or broil 4 in. from heat until a thermometer reads 145°, 13-17 minutes, turning occasionally and basting with reserved marinade during the last 5 minutes. Let stand 5 minutes before serving.

vegetable oil (small amount for browning chops)
1/4 cup onion, chopped
1 tablespoon vinegar
1 teaspoon chili powder
1/2 teaspoon pepper
1/4 cup maple syrup
1/4 cup water
1 tablespoon Worcestershire sauce
salt
flour (as needed to thicken the gravy)

Steps:

  • Preheat the oven to 400°F.
  • Lightly brown the pork chops in a small amount of oil, then place them in a flat baking dish with sides.
  • Combine the other ingredients in a small saucepan and heat until warm; pour over chops.
  • Cover and bake for 45 minutes, basting occasionally.
  • Place the pork chops on a warming platter and pour the sauce into a saucepan.
  • Thicken it slightly with flour to make a gravy, salt to taste, and serve it over the chops.
