- Whisk together the maple syrup, vinegar and dry mustard.
- Score the ham, brush on glaze and continue to brush as it bakes.
- If desired, insert whole cloves into the ham before glazing and coat ham with pineapple after first glazing.

Steps:
- Heat the oven to 200C/fan 180C/gas 6. Put the sausages into a roasting tin, drizzle with a little oil and roast for 15 minutes, tossing regularly, until golden and crisp. Add the mustard and maple syrup, toss and cook for 5-10 minutes or until sticky and caramelised. Cool slightly then cut in half lengthways.
- Heat the blinis following pack instructions.
- Put two sausage halves and some glaze onto each blini then sprinkle with chives and pour over more maple syrup to serve.

You might even want to drizzle a tiny bit more syrup over the whole thing as you sit down to eat, so that each bite of sausage, bread and runny yolk has the perfect blend of savory and sweet. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless hockey pucks. Twenty percent by weight is a good ratio, though 25 doesn’t hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon.
