½ cup walnuts
2?¾ cups all-purpose flour
1 tablespoon baking powder
? cup butter
1 cup maple syrup
1 egg, lightly beaten
? cup fat-free evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan. Spread walnuts onto a baking sheet.
  • Toast walnuts in the preheated oven until nuts start to turn golden brown and become fragrant, 10 to 15 minutes. Remove from oven; keep oven on.
  • Mix flour and baking powder together in a large bowl. Make a well in the center.
  • Beat butter in a bowl with a wooden spoon until creamy. Mix in maple syrup. Beat in egg. Add milk and vanilla extract. Pour into the well in the flour mixture; stir until just combined. Fold in toasted walnuts.
  • Scrape batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted near the center comes out clean, 40 to 50 minutes. Cool on a wire rack for 10 minutes. Invert onto the wire rack to finish cooling.

1 cup plain yogurt
1 egg, lightly beaten
½ cup maple syrup
1 lemon, juiced
2 cups whole wheat pastry flour
2 teaspoons baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 5x9 inch loaf pan.
  • In a bowl, mix the milk, yogurt, egg, maple syrup, and lemon juice. In a separate bowl, mix the flour, baking soda, cinnamon, and nutmeg. Gradually stir the flour mixture into the milk mixture until moistened. Pour into the prepared loaf pan.
  • Bake 50 minutes in the preheated oven, or until a knife inserted in the center comes out clean.
