A delicious spin on classic shortbread cookies - these are light and buttery with the crunch of pecans and the hint of maple. They make the perfect holiday dessert treat for gift-giving.

1 cup butter or margarine, softened
3/4 cup maple sugar or granulated sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 3/4 cups Gold Medal™ all-purpose flour
1 cup finely chopped pecans, toasted
1/4 cup coarse sugar
40 pecan halves, if desired
3 tablespoons real maple syrup

Steps:

  • In large bowl, beat butter, 1/2 cup of the maple sugar, the vanilla and salt with electric mixer on medium speed 3 minutes or until light and fluffy. On low speed, gradually add flour, beating just until blended. Stir in chopped pecans.
  • Shape dough into 11x2-inch log. Mix remaining 1/4 cup maple sugar and coarse sugar; roll dough log in sugar mixture, pressing lightly to coat. Wrap in plastic wrap; refrigerate 2 hours or until firm.
  • Heat oven to 350°F. Unwrap dough; cut into 40 (1/4-inch) slices. On ungreased cookie sheets, place slices 1 inch apart. Top each slice with pecan half.
  • Bake 12 to 14 minutes or until edges are golden brown. Cool 2 minutes; remove from pans to cooling racks to cool completely. Brush cookies with maple syrup. Let stand until dry.

Shortbread
1/2 cup Land O Lakes® Butter softened
1/3 cup firmly packed brown sugar
1 cup all-purpose flour
Topping
1/3 cup firmly packed brown sugar
3 tablespoons pure maple syrup
1 large Land O Lakes® Egg
1/2 cup finely chopped pecans

Steps:

  • Heat oven to 350°F.
  • Combine butter and 1/3 cup brown sugar in small bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour; beat at low speed, scraping bowl often, until mixture forms a dough. Press evenly into ungreased 8-inch square baking pan. Prick with fork. Bake 20 minutes.
  • Meanwhile, combine 1/3 cup brown sugar, maple syrup and egg in small bowl; mix well.
  • Spread topping over hot, partially baked shortbread; sprinkle with pecans. Continue baking 12-16 minutes or until lightly browned. Immediately run knife around edges to loosen. Cool completely. Cut into bars.

  • For crust: Preheat the oven to 350°F. Butter or spray the bottom and sides a 13x9-inch baking pan with baking spray. Line the pan with parchment paper or foil letting the excess extend over the edges of the pan.  Cube the butter and place in a saucepan over medium heat. Cook until butter smells nutty and the solids and turned brown, 6-8 minutes. Immediately pour the butter into a medium bowl, top stop the cooking. Whisk in the sugar and salt. Add flour and stir until it is fully moistened. Press the crust evenly into the bottom of the baking pan. (The crust will be moist. Press carefully to reach all edges and corners of the pan). Bake for 15 minutes. Remove and lightly press down any large bubbles in the crust.  For the filling: In a large bowl, whisk together the melted butter, corn syrup, sugar, eggs, vanilla, and salt until smooth. Stir in the pecan halves. Pour over the baked crust. Bake at 350°F for 30 to 35 minutes or until the topping is puffed and set (it should not wiggle). Let cool completely in the pan. Use the excess parchment or foil to lift the bars out of the pan. Cut into squares to serve.
