1 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 cup butter
6 tablespoons sugar
1/2 cup pecans, roughly chopped
3 eggs
1 tablespoon milk
1 lemon, zest of
5 tablespoons maple syrup
6 tablespoons icing sugar (optional)
1 tablespoon lemon juice (optional)
2 tablespoons of roughly chopped pecans (optional)

Steps:

  • Preheat oven, grease& line the base of a 9x5 loaf pan with baking/parchment paper.
  • Sift flour and baking powder into a bowl.
  • Cut butter into the flour and mix until the mixture looks like fine breadcrumbs.
  • Add in the sugar and pecans.
  • Beat eggs together with milk and lemon zest in a seperate bowl.
  • Stir in maple syrup.
  • Add this to the flour mixture and gently mix together.
  • Do not overmix, only until all dry ingredients have become moist.
  • The batter should be lumpy.
  • Pour batter into pan and smooth out the surface of the batter.
  • Bake in the oven for about 50-60 minutes or until cake is lightly browned.
  • To make sure, insert a toothpick into the center of the cake and if it comes out clean then the cake is ready.
  • Cool cake in pan for at least 10 minutes then turn out and let it cool on the rack.
  • (For Icing) Sift the icing sugar into a small bowl and stir in the lemon juice to create a smooth icing.
  • Drizzle over the loaf and then sprinkle the chopped pecans over the icing.
  • Wait until the icing is set then slice.

I decided to experiment a little with meatloaf, since I don't cook often, I tend to experiment when I do. The kids loved it, which is odd for them. I find it works well in a cast-iron dutchoven.

1 lb ground beef, raw
1/2 cup onion, diced
1/2 cup sweet pepper, diced
1 egg
1/2 cup pumpernickel bread, toasted
1/2 cup pure maple syrup
1 tablespoon Worcestershire sauce
salt, to taste
pepper, to taste
8 slices bacon

Steps:

  • Preheat oven to 350°F.
  • Chop vegetables while toasting bread. In a mixing bowl put ground meat, add egg, vegetables and Worcestershire Sauce. Tear bread into small pieces and add to mix. Knead ingredients together and add syrup and salt and pepper. Knead until mixture is homogeneous.
  • Place mixture in lubricated baking dish and spread out evenly. Add bacon in a weaving pattern on top. Cover and place in oven.
  • After about 30 minutes, remove cover and put under the broiler for about 5 minutes or until bacon is of desired crispness.

  • 1. Center a rack in the oven and preheat it to 350?F. Butter an 8-inch loaf pan and dust with flour (or use baker's spray). Whisk together the flour, baking powder and baking soda. 2. Put the sugar, salt and zest in the bowl of a stand mixer or a large bowl that you can use with a hand mixer. Reach in and rub the ingredients together until the sugar is moist and fragrant; it may even turn orange. Add the butter, miso and maple syrup to the bowl. If using, attach the bowl to the mixer stand and fit it with the paddle attachment. 3. Beat on medium speed, scraping down the bowl and beater(s) as needed, until the mixture is smooth and creamy, about 3 minutes. One by one, add the eggs, beating for about 1 minute after each goes in. Beat in the vanilla. The mixture might curdle, but this is temporary. Turn off the mixer, add the dry ingredients all at once and then pulse to begin blending. Beat on low speed until the dry ingredients are almost incorporated. With the mixer still on low, pour in the buttermilk and blend well. Scrape the batter into the pan, working it into the corners and smoothing the top. 4. Bake for 50 to 55 minutes, checking the bread after 40 minutes and covering the top loosely with a foil or parchment tent if it's browning too fast. Glaze the bread (optional): Stir the marmalade or jam and water together and heat the mixture in the microwave or over low heat until it comes just to a boil. Using a pastry brush (or a spoon), cover the top of the loaf with the glaze. Allow the bread to cool to room temperature before slicing. Note: Wrapped well, the bread will keep for about 4 days at room temperature. If it stales?or maybe even if it doesn't?toast it lightly before serving.
