Total Time 50 minutes

Prep Time 25 minutes

Cook Time 25 minutes

Yield 4 serving(s)

Number Of Ingredients 12

1 cup maple syrup
4 teaspoons balsamic vinegar
4 teaspoons brown sugar
1/4 teaspoon cinnamon
3/4 cup pecan halves, toasted
4 pork chops (1-inch-thick)
3/4 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons olive oil, divided
2 green apples, cut into (3/4-inch)
1/2 teaspoon salt
1/4 cup finely diced crystallized ginger (optional)

Steps:

  • Whisk together first 4 ingredients in a medium bowl.
  • Stir together pecans and 2 tablespoons maple syrup mixture in a skillet over medium heat, stirring to coat pecans. Cook, stirring often, 3 minutes or until pecans are glazed. Arrange pecans in an even layer on wax paper; let cool. Coarsely chop, and set aside.
  • Sprinkle pork chops evenly with 3/4 teaspoon salt and pepper; brush with 1 tablespoon olive oil.
  • Grill chops, covered with grill lid, over medium-high heat (350°to 400°) 8 minutes on each side or until a meat thermometer inserted in thickest portion registers 160°, basting with 1/2 cup maple syrup mixture during last five minutes of cooking. (If glazed earlier, glaze will burn.) Transfer to serving platter. Cover and keep warm.
  • Sprinkle apple slices evenly with 1/2 teaspoon salt; brush with remaining 1 tablespoon oil.
  • Grill apples, without grill lid, over medium-high heat (350° to 400°) 4 to 6 minutes, turning occasionally and brushing with 1/4 cup syrup mixture.
  • Spoon remaining maple syrup mixture over pork chops. Sprinkle with chopped pecans and, if desired, crystallized ginger. Serve with grilled apples.

  • "1. Preheat oven to 425ºF. 2. For the glaze: In a small glass bowl, whisk together maple syrup, balsamic vinegar, brown sugar, sea salt, cinnamon, nutmeg, and ginger. 3. In a dry, non-stick skillet, toast pecans briefly over low heat until warm and fragrant. Take care not to burn. Add 2 tablespoons of the maple glaze to the pan and cook until pecans are glazed, about 3 minutes. Transfer to a plate and allow to cool. 4. Season pork chops and apple slices with salt and pepper to taste. The chops should be seasoned a bit more aggressively than the apples. Drizzle the apples and the chops with avocado oil, and then, lightly brush with the maple glaze. Reserve the apples and place the pork chops on a sheet pan in the oven. 5. Bake for 15 minutes. Remove the sheet pan from the oven and flip the pork chops. Add the apple slices, giving everything a quick additional brush of the maple glaze. 6. Return to the oven for an additional 5-10 minutes, until the pork chops are thoroughly cooked and the apples are just tender. Allow the chops to rest 5 minutes before serving. Top with apple slices and sprinkle with the glazed pecans and candied ginger (if desired)."
