Maple Fudge with Maple Syrup Recipe | Allrecipes image

This yummy sweet is one of my childhood favorites... it's the best homemade maple fudge. If you like walnuts, don't forget to add them.

2 cups maple syrup
1 cup heavy cream
¾ cup dark brown sugar
2 tablespoons butter
1 pinch salt
? cup chopped walnuts
1 tablespoon vanilla extract

Steps:

  • Line an 8x8-inch baking pan with waxed paper. Butter the paper.
  • Bring maple syrup, heavy cream, and brown sugar to a boil in a saucepan over medium heat. Continue to boil, without stirring, until mixture starts to bubble and registers 240 degrees F (166 degrees C) on a candy thermometer.
  • Remove from heat. Add butter and salt but do not mix. Let sit until mixture reaches 105 degrees F (41 degrees C).
  • Add walnuts and vanilla; beat until mixture loses its gloss. Pour into the prepared pan and let cool to room temperature. Cut, wrap, and store in the refrigerator.

Walnut flecked fudge made with real maple syrup instead of chocolate -- sweet, creamy and delicious

2 cups maple syrup
1 tablespoon light corn syrup
¾ cup light cream
1 teaspoon vanilla extract
¾ cup chopped walnuts

Steps:

  • Butter an 8x8 inch dish.
  • In a medium saucepan, combine maple syrup, corn syrup, and cream. Bring to a boil, stirring constantly. Then heat without stirring to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat, and let cool until lukewarm.
  • Beat mixture until it thickens and loses its gloss. Quickly fold in vanilla and nuts, and spread in prepared pan. Let cool completely before cutting.
