this is a great recipe my friend gave me awhile back when we were visiting at a nursing home

1 pound(s) chicken breast, cut into strips
2 teaspoon(s) curry powder
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
3 tablespoon(s) oil, divided
2 tablespoon(s) garlic, minced
1 tablespoon(s) grated fresh ginger
1 medium red bell pepper, cut into strips
1 medium yellow bell pepper or orange, cut into strips
2 - stalks celery, cut diagonal
1 can(s) (14 oz) light coconut milk
2 teaspoon(s) lemon zest, grated
1 large mango, cut into bite size pieces
3 tablespoon(s) fresh chopped basil

Steps:

  • season chicken with curry powder, salt and pepper.
  • in a large nonstick skillet, heat 2 tablespoons oil over medium heat. saute chicken until just cooked, about 7-8 minutes. remove to plate and set aside.
  • add 1 tablespoon oil to pan. saute garlic and ginger along with peppers and celery. saute 5-6 minutes. stir occasionally.
  • add coconut milk, lemon zest and mango, along with chicken. heat through. stir in basil.
  • serve with short grain rice.

4 pieces chicken (legs or thighs)
½ cup onions (chopped)
1 tablespoon garlic hoisin sauce (store bought)
¼ teaspoon freshly ground black pepper (and more to taste)
2 tablespoons champagne vinegar
½ teaspoon fleur de sel
1 tablespoon unsalted butter
1 cup mango (cubed, about 1 large mango)
salt (to taste)

Steps:

  • Clean chicken pieces with vinegar/lemon juice, rinse with water, and pat dry. Marinate chicken with onion, garlic hoisin sauce, ground black pepper, champagne, and salt for at least 1 hour or overnight. Remove chicken from marinade (save marinade for later) and bake 20 minutes on a baking dish at 400°F . Turn chicken pieces over and continue baking for another 20 minutes.
  • In a saucepan, add unsalted butter and marinade. Cook mixture for 3 - 4 minutes while stirring. Add mango cubes and cook for 6 - 8 minutes stirring occasionally. Add 4 tablespoons of sauce from baked chicken pieces or add 4 tablespoons of water. Season with salt and pepper to taste and add habanero hot sauce at the end if using. Place chicken pieces on a platter and pour mango sauce and serve hot with rice or any other types of grains.

Add chicken, broth, coconut milk and jerk seasoning to skillet; stir. Bring to a simmer over medium-low heat. Cover and cook 2 minutes or until chicken is hot. Return peppers to skillet; add beans and mango. Stir; bring to a simmer. Cover; cook 2 minutes or until heated through. Stir in scallions. Place on serving platter. Garnish with cashews and additional scallions, as desired. Serves 4 main dish servings. (Serve over rice if desired, or substitute cauliflower rice for a more keto-friendly option.)
