A simple quick dessert, I serve it in little tea cups or for a party, in disposable Champagne glasses.

Number Of Ingredients 6

1 (30 ounce) can mango slices with juice
3 cups water, divided
4 (.25 ounce) packages powdered gelatin
1 cup white sugar
2 cups heavy whipping cream
2 tablespoons heavy whipping cream

Steps:

  • Drain mango slices, reserving 1/2 cup juice. Place mango slices and reserved juice in a bowl. Beat with an electric mixer until pureed.
  • Bring 2 cups water to a boil in a large saucepan. Add gelatin; stir quickly until dissolved. Pour in sugar and stir until dissolved. Add remaining 1 cup water. Remove from heat and let cool, about 5 minutes.
  • Mix pureed mango and 2 cups plus 2 tablespoons heavy cream into the water mixture; mix well. Pour into 8 dessert cups.
  • Refrigerate until set, at least 4 hours.

Start with very ripe mangoes, preferably Alphonso or Champagne varieties. As they ripen, mangoes trade their dark green coloring for bright yellow. If you can't find fresh, Pichet recommends Ratna canned mangoes, available at Indian markets and online stores. Prep: 25 minutes; Cook: 17 minutes; Chill: 3 hours.

Yield Makes 10 servings

Number Of Ingredients 7

6 mangoes, chopped
2 tablespoons fresh lemon juice
½ teaspoon salt
1 cup plus 2 tablespoons sugar
1 envelope unflavored gelatin
4 cups heavy cream
Topping: Sweetened Condensed Milk Chantilly or 1/2 cup evaporated milk (optional)

Steps:

  • Place first 3 ingredients in a large saucepan over medium heat, and sauté 5 minutes or until mango is very soft.
  • Add sugar, and continue cooking, stirring and scraping bottom of saucepan frequently, 12 to 15 minutes or until thick and syrupy with a few chunks of mango remaining. (Do not let sugar caramelize or brown.) Remove from heat, and cool to lukewarm.
  • Sprinkle gelatin over 3 to 4 tablespoons cold water in a small bowl, and let soften 3 to 5 minutes. Stir softened gelatin into mango mixture until dissolved. Add cream, and stir until blended.
  • Divide mixture among 10 (4-ounce) ramekins or serving bowls. Chill, uncovered, 3 hours or until set. Serve cold, topped with Sweetened Condensed Milk Chantilly or evaporated milk, if desired.
