2 cups all-purpose flour
1 cup melted butter
½ cup confectioners' sugar
½ cup chopped macadamia nuts
4 cups chopped mangoes
¾ cup white sugar
? cup water
1 teaspoon lemon juice
4 tablespoons cornstarch
3 tablespoons water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Combine flour, butter, and confectioners' sugar in a bowl. Stir in macadamia nuts. Press half of the mixture into a 1/2-inch-thick layer on the bottom of the prepared pan to make the crust.
  • Bake in the preheated oven until lightly browned, 15 to 20 minutes.
  • Stir mangoes, white sugar, 1/3 cup water, and lemon juice together in a saucepan. Cook over medium heat until mangoes reduce by 1/3, 7 to 10 minutes.
  • Combine cornstarch and 3 tablespoons water in a small bowl. Pour into the mango mixture; cook until thickened, 5 to 7 minutes. Cool briefly and pour over the crust. Sprinkle the remaining flour mixture on top.
  • Continue baking until lightly browned, 20 to 25 minutes. Cool until set, about 15 minutes. Cut into bars.

Crust
2 cups all-purpose flour
3/4 cup sugar
1/4 teaspoon salt
3/4 cup Land O Lakes® Butter
Filling
2 medium (2 cups) fresh mangoes, * cut into 1/2-inch cubes
1 cup peach preserves, warmed
1/2 cup slivered almonds, toasted, finely chopped
Glaze
1 cup powdered sugar
2 teaspoons freshly grated lemon zest
1/2 teaspoon vanilla
1 to 2 tablespoons Land O Lakes® Fat Free Half & Half

Steps:

  • Heat oven to 375°F.
  • Combine flour, sugar, and salt in bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Reserve 1/2 cup crumb mixture; set aside.
  • Press remaining crumb mixture onto bottom of ungreased 13x9-inch baking pan. Bake 16-18 minutes or until edges are lightly browned. Remove from oven.
  • Top hot, partially baked crust with mango and preserves. Combine reserved crumb mixture and almonds; sprinkle over preserves. Bake 21-23 minutes or until crumbs are golden. Cool completely.
  • Combine powdered sugar, lemon zest, and vanilla in bowl. Stir in enough half & half for desired drizzling consistency. Drizzle over cooled bars.
