A fabulous Manchego cheese appetizer for a cocktail party, or even a dinner party.

Yield 2 cheese wedges

Number Of Ingredients 7

1 jalapeno chile, seeded, finely chopped
2 tablespoons fresh cilantro, finely chopped
12 ounces Manchego cheese, cut into two wedges
1 cup all-purpose flour
1 cup cold water
¼ cup crushed ice
vegetable oil for deep frying, or as needed

Steps:

  • Combine jalapeno and cilantro together in a bowl. Coat both Manchego cheese wedges with the mixture.
  • Mix all-purpose flour, water, and crushed ice together in a bowl until there are no lumps in the flour. Dip cheese wedges into the batter.
  • Heat vegetable oil in a large saucepan over medium-high heat. Dip cheese wedges into hot oil and fry until batter is crispy and browned, 3 to 4 minutes. Transfer fried cheese to paper towels layered on a plate to drain excess oil.

The only thing more crowd-pleasing than cheese is marinated cheese. If Manchego isn’t your thing, go for any semi-firm cheese like white cheddar, Gouda, or Monterey Jack.

Yield 8 servings

Number Of Ingredients 6

1 head of garlic, cloves separated and peeled (about 12 cloves)
1 small orange, quartered through stem end, thinly sliced crosswise, seeds removed
½ cup extra-virgin olive oil
3 sprigs rosemary
Kosher salt
1 lb. young Manchego cheese, cut or broken into ¾" pieces

Steps:

  • Cook garlic, orange, and oil in a small saucepan over medium heat, stirring occasionally, until garlic starts to turn golden, 10–12 minutes. Remove from heat and add rosemary sprigs. Season with salt and let cool.
  • Pour garlic mixture into a medium bowl, add cheese, and gently toss to coat cheese. Cover and chill at least 12 hours before serving.
  • Do Ahead: Cheese can be marinated 3 days ahead. Keep chilled.
