3 large Boneless chicken breasts boneless, skinless, halved into thin cutlets
Salt to taste
Black pepper to taste
3 large Eggs
1-1/2 cups Panko Bread Crumbs
1 cup Parmesan cheese finely shredded
1/2 teaspoon Salt
1/4 teaspoon Black pepper
2 teaspoons Garlic powder
12 slices Deli Ham
6 slices Swiss Cheese
DIPPING SAUCE:
2 tablespoons Dijon mustard
3 tablespoons Mayonnaise
1 teaspoon Yellow mustard
1 teaspoon Honey

Steps:

  • "1) Preheat the oven to 350 degrees. Lightly spray a 9x13 baking dish. 2) Pat the chicken dry with paper towels and lightly season both sides with salt and pepper. 3) Whisk the eggs together in a shallow pie plate. In another shallow pie plate, toss together the Panko, Parmesan, salt, pepper, and garlic powder. 4) Dip the chicken in the egg mixture and immediately press it into the Panko mixture, pressing the mixture into both sides of the chicken. Place the chicken in a single layer in the prepared baking dish. 5) Bake uncovered for 30 minutes. Remove from the oven and layer two slices of ham across each chicken piece, followed by a slice of Swiss cheese to cover most of the ham and chicken. 6) Return to the oven and bake for another 5 or so minutes until the cheese is melted. 7) While the chicken bakes, whisk together the dipping sauce ingredients. 8) Serve the chicken warm with the dipping sauce on the side. "

This lightly breaded and baked chicken with ham and melted cheese on top was a request from several community members and once we started testing it, we could see why! The simple tart-sweet Malibu sauce served on the side makes the dish.

4 oz Cheese, Swiss, shredded or sliced (sub white cheddar)
1 lb Chicken breast, boneless and skinless, halved
2 Egg yolks
1 Tbsp Water
3/4 cup Panko breadcrumbs
1/2 tsp Salt
1/4 tsp Black pepper
1/4 tsp Thyme, dried
1/4 tsp Garlic powder
4 slices Ham, deli-sliced
1/4 cup Mayonnaise
3 tsp Mustard, Dijon
1 tsp Honey
12 oz Broccoli florets
2 cloves Garlic, thinly sliced
1 Tbsp Oil, cooking

Steps:

  • Heat oven to 350C / 177F.
  • Line a sheet pan with foil or brush it with some oil to prevent sticking. (Note: The sheet pan will need to hold both the chicken and broccoli. If it won’t easily fit on one, prepare a second pan.)
  • Toss broccoli and garlic with oil. Season with some salt and pepper. Spread out on one half of the sheet pan.
  • Bread chicken by coating each piece in egg yolk / water mixture and then in panko mixture. Spread out on second half of the sheet pan.
  • Bake chicken and broccoli until chicken is cooked through and broccoli is tender, 20 to 25 minutes, stirring broccoli with a spatula halfway through cooking. (Note: If broccoli finishes cooking before chicken, transfer it to a serving dish and return chicken to the oven.)
  • Remove pan from the oven and turn on the oven’s broiler. Transfer broccoli to a serving dish, leaving chicken on the sheet pan.
  • Top each piece of chicken with a slice of ham and sprinkle cheese on top. Place chicken under the broiler just until cheese is melted, 1 to 3 minutes.
  • Serve chicken with Malibu sauce and broccoli on the side. Enjoy!
