1 serving fresh noodles ( , you can use thin dried noodles instead)
handful Chinese water spinach or Bok Choy
2 garlic cloves ( , peeled and minced)
1 green onion ( , white part and green part separated)
1 teaspoon minced ginger
1 tablespoon smashed peanuts
1 tablespoon minced coriander
1 tablespoon minced Zha Cai ( , optional)
1 tablespoon soy sauce
pinch of salt if necessary
1/4 teaspoon gourmet powder
2 teaspoons lard
1 teaspoon sesame oil
1/4 teaspoon black vinegar
1 to 2 tablespoons Chinese red oil
1/8 teaspoon Sichuan peppercorn powder (to strong the numbing tastes, optional)

Steps:

  • In the serving bowl, add a small pinch of salt, vinegar, soy sauce, gourmet powder, minced green onion whites, minced garlic, minced ginger, chili oil, sesame oil and lard.
  • Cook noodles in boiling water according to the instructions on the package. Pour some noodle cooking soup into the serving bowl to tune the seasonings. And then transfer the noodles to serving bowl. Rinse the greens and transfer to serving bowl too.
  • Garnish peanuts, minced green onions, minced coriander and minced Za cai. Add more chili oil if a stronger taste is wanted!

The following recipe is by A. Zimmern and is adapted from the Delish website (www.delish.com). It combines roasted peanut oil, which bears a rich, nutty scent, Sichuan pepper, and Chinese chilies with some selected spices and ingredients for a classic mala sauce.

¾ cup roasted peanut oil
1 tablespoon minced fresh ginger
1 star anise pod
½ small cinnamon stick
1 small shallot, minced
1 small garlic clove, minced
2 tablespoons Sichuan peppercorn
½ cup dried hot Chinese chiles
¼ cup toasted sesame oil

Steps:

  • Heat the peanut oil in a skillet over a low flame to 175 ºF.
  • Add all of the spices and cook until the oil reaches a temperature of 225 ºF over moderately low heat. Simmer at 225 ºF for 5 minutes.
  • Pour the mixture into a heatproof jar and leave it to cool. Mix in the sesame oil.

  • To Cook Blanch the cubed beef in rapidly boiling water for 3 mins to cleanse, then strain, rinse and set aside. In a clean pot, heat vegetable oil, add spring onion and ginger and cook over medium heat for 2 mins, or until fragrant. Add Shaoxing cooking wine, star anise and doubanjiang, cook for 2 mins before adding beef then continue frying to lightly brown and seal the meat on all sides. Add five spice, Lee Kum Kee Premium Soy Sauce, sugar and chicken stock, bring to a rolling boil, cover and simmer gently for 90 mins or until the meat is succulent and tender. Once the meat has been cooking for about 1 hr, you can start preparing the noodles. Combine the flour, salt and water and knead well until an elastic dough forms (about 10 mins). Stretch the dough into a long strip over a floured bench, fold in half and stretch again, doubling the amount of noodle threads. Repeat the fold and stretch process over and over to quickly form more noodles, (it will double with each fold and stretch). Once you have formed consistent, long and thin noodles, drop them into a pot of fast boiling water and cook for 3 to 4 mins. While the noodles are cooking, bring a pot of chicken stock to the boil for the soup base. Assemble the meal by first dividing Lee Kum Kee Premium Soy Sauce, Yeo’s Pure Sesame Oil, peanuts, preserved vegetables, Sichuan peppercorns, garlic, ginger and Lee Kum Kee Peppercorn Chilli Oil evenly into serving bowls. Rinse and add freshly cooked noodles, then ladle the chicken stock into the bowls. Generously top with the braised beef and garnish with spring onions, crushed peanuts, minced coriander and chilli oil to taste. Serve hot and enjoy!
