Easy Sichuan Mala beef

Number Of Ingredients 23

1500 g beef tenderloin or shank
2 scallions
2 chunks ginger
1 tbsp. cooking wine
50 g chili pepper (I use a mix of long red ones and hotter small ones)
2 star anise
1 inch Chinese cinnamon
2 tbsp. Sichuan peppercorn (, a mixture of red and green)
1 tbsp. white peppercorn
2 bay leaves
2 cloves
1 Amomum tsao-ko
1 small piece Tangerine Peel
1 tbsp. toasted sesame seeds
1-2 tbsp. toasted peanuts
3 cups oil
3-5 tbsp. spice mix
1 tbsp. doubanjiang ( , adding the color and flavor)
1 tsp. salt
1/2 tsp. sugar
1 tbsp. cooking wine
1 tbsp. light soy sauce
1 tbsp. toasted sesame seeds

Steps:

  • Remove the fat part and fascia off and then cut the beef into larger chunks. Transfer to a wok with water, add ginger, cooking wine and scallion. Bring to a boiling and then remove the floats. Cover the slow down the fire to cook for 30 minutes until the beef is completely cooked.
  • Transfer out and drain completely. Cut the beef into strips around 1cm wide and 5-8 cm long.
  • Add 3 cups of oil in wok, fry the beef strips until darkened (remove the water content). Remove extra oil and keep half of the oil.
  • Fry doubanjiang until aromatic with slow fire and then return beef strips in. Add chili powder, barbecue mix , salt and sugar. Mix well.
  • Drizzle some light soy sauce and cooking wine over wok. And finally sprinkle some sesame seeds. Let it cool down before serving. Best flavors coming in the next day.

The following recipe is by A. Zimmern and is adapted from the Delish website (www.delish.com). It combines roasted peanut oil, which bears a rich, nutty scent, Sichuan pepper, and Chinese chilies with some selected spices and ingredients for a classic mala sauce.

¾ cup roasted peanut oil
1 tablespoon minced fresh ginger
1 star anise pod
½ small cinnamon stick
1 small shallot, minced
1 small garlic clove, minced
2 tablespoons Sichuan peppercorn
½ cup dried hot Chinese chiles
¼ cup toasted sesame oil

Steps:

  • Heat the peanut oil in a skillet over a low flame to 175 ºF.
  • Add all of the spices and cook until the oil reaches a temperature of 225 ºF over moderately low heat. Simmer at 225 ºF for 5 minutes.
  • Pour the mixture into a heatproof jar and leave it to cool. Mix in the sesame oil.

  • For the ledombolo: Mix the flour, sugar and salt.  Pour about a cup of warm water into a jug, add the yeast and allow to foam.  Now add the water and yeast mixture to the flour mixture.  Slowly add more warm water and mix (either with your hands or with a mixer with a dough hook attached). Add the chopped parsley as you mix. Once the dough becomes soft and pliable, stop adding water and begin kneading.  If using a mixer, mix until the dough starts pulling away from the sides of the bowl; if by hand knead for 15 mins.  Place the dough in a bowl and cover with a damp, warm cloth or plastic wrap brushed with oil.  Proof until double in size. Knock the dough back by punching it a few times by hand.  If making a stew, roll into equal-sized balls and place in the simmering stew. They are ready when a toothpick pricked into one of them comes out clean.For the mogodu:Rinse and ensure the tripe is clean and then cut it (using a sharp pair of kitchen scissors) into pieces. I prefer my pieces to be relatively large, about the size of a spoon.Place all the ingredients in a pot. If the beef stock doesn’t cover the tripe completely, then add enough to cover it. Bring the entire mixture to the boil. Once boiling rapidly, reduce the heat to low and allow the pot to simmer with a half open lid (or a lid with an air vent) for about 2 hours. Test the tripe: if it isn’t soft enough then let it simmer longer. Remove the lid completely and increase the heat a little to reduce the liquid in the pot to a thick sauce.
