2 tablespoons unsalted butter
3 large shallots, chopped
2 cups uncooked jasmine rice, rinsed and drained
1 tablespoon chopped garlic
1 teaspoon salt
1 teaspoon ground turmeric
1 teaspoon ground coriander
½ teaspoon ground cumin
2 bay leaves
3?½ cups low-sodium chicken broth

Steps:

  • Heat butter in large, heavy saucepan over medium heat. Add shallots; cook and stir until softened and translucent, about 3 minutes. Pour in rice, garlic, salt, turmeric, coriander, cumin, and bay leaves. Continue to cook and stir for 3 minutes. Add chicken broth and bring to a boil. Reduce heat to low, cover, and cook until broth is absorbed and rice is tender, 20 to 25 minutes.
  • Remove from heat. Discard bay leaves. Transfer to a bowl.

2 cups granulated sugar
1 cup (8 oz.) unsalted butter, softened
5 large eggs
3 cups (about 12 3/4 oz.) all-purpose flour, sifted, plus more for pans and work surface
1 tablespoon baking powder
1/2 teaspoon table salt
1 1/4 cups whole milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Coat 2 (9-inch) round cake pans with cooking spray; dust with flour. Beat sugar and butter with a stand mixer fitted with a paddle attachment on medium-high speed until fluffy, about 4 minutes. Add eggs 1 at a time, beating well after each addition.
  • Stir together flour, baking powder, and salt in a bowl until combined; add to butter mixture alternately with milk in 2 batches, beginning and ending with flour mixture, beating on low speed until incorporated after each addition. Stir in vanilla.
  • Pour batter evenly into prepared cake pans. Bake in preheated oven until a wooden pick inserted in centers comes out clean, 25 to 28 minutes. Cool in pans 10 minutes. Remove layers from pans, and let cool completely on a wire rack, about 30 minutes.
