With a creamy beef filling and a cheesy tater tot topping, this one-skillet dinner is sure to make a regular appearance in your regular weeknight rotation.

4 strips of bacon (about 3 oz.)
1/2 yellow onion, chopped
2 cloves garlic, chopped
1 lb. ground sirloin
1 10.75 oz can cream of mushroom soup
3/4 c. milk
1/2 tsp. salt
3/4 tsp. ground black pepper, divided
3 c. baby spinach, roughly chopped
1 c. frozen corn
8 oz. shredded cheddar or Colby jack cheese
1 32 oz bag of tater tots
1/4 c. grated parmesan cheese 
Chopped chives or scallions, for garnish 

Steps:

  • Preheat the oven to 375 degrees. Remove the tater tots from the freezer to let them thaw slightly while you prepare the filling. Heat a large skillet over medium heat. Add the bacon and cook until golden brown and extra crispy, 6-8 minutes. Remove to a paper towel lined plate and leave the grease in the skillet. Set all of the bacon aside for topping later. 
  • Add the onion to the skillet and cook until slightly softened, about 4 minutes. Add the garlic and cook 1 more minute. Add the ground beef and break into small pieces with a wooden spoon. Cook the meat until no pink pieces remain, 6-8 minutes. Drain off excess fat or liquid, if you like. Remove skillet from the heat. Stir in the soup, milk, salt and ½ teaspoon black pepper and mix until smooth. Fold in the spinach to wilt slightly, then the corn.
  • Sprinkle the cheddar cheese evenly over the top of the casserole. Place the tater tots on top in a single layer, arranging them in concentric circles (or just toss them on and push them very close together.) Sprinkle the top with parmesan cheese and the additional 1/4 teaspoon of black pepper. 
  • Bake 30-35 minutes until the tater tots are golden. Remove from the oven and crumble the cooked bacon over top. Let rest 5 minutes. Top with chopped chives or scallions and serve.

4 1/2 tsp. Quick-Rise Yeast
2 c. Warm Water (115ºF)
2 tsp. Sugar
5 c. Bread Flour
1/4 c. Olive Oil
1 tsp. Salt

Steps:

  • In the bowl of a stand mixer, combine yeast, water, and sugar, and let sit for 10 minutes. The liquid should be foamy and bubbly, indicating that the yeast is alive.Add bread flour, olive oil, and salt, and stir using the dough hook or a wooden spoon, until roughly combined. Fit the bowl and the dough hook onto the stand mixer and knead on medium low speed for 10 minutes, until smooth. Cover the bowl with plastic wrap and let rise for about 30 minutes, until the dough has doubled in size.Remove the dough to a lightly floured surface and divide into four even pieces. Shape each piece of dough into a ball. The dough is now ready to be rolled out and baked, or ready to be frozen. To freeze pizza dough, place the pizza dough balls into resealable plastic bags. Make sure that if you put multiple balls of dough in one bag, you use parchment paper or wax paper to keep them separated.To thaw, place the pizza dough in the refrigerator the morning before you want to make dinner, then roll and bake as usual.To bake, preheat oven to 500ºF. Roll thawed (or freshly made) dough and bake each pizza about 10–15 minutes.

  • Grease a 9x13 pan. Chop bacon into 1 1/2 inch pieces. Cook until crispy. Set aside on paper towels and pat to remove excess grease. Pour all but a couple of tablespoons of the bacon grease out of the pan. Cook shallots in remaining fat until softened. Set aside. Whisk eggs for 1–2 minutes. Whisk in milk, mustard, salt, and pepper. Stir in reserved bacon, shallots, cheese, and parsley. Fold in the torn bread. Pour into the prepared pan and cover with foil. Refrigerate for at least 6 hours, up to 24. Preheat oven to 350ºF. Bake strata for 1 hour and 10 minutes, or until golden, puffed, and set in the center. Remove from oven and let rest for 5 minutes before serving. (The strata will deflate as is rests.) Scoop portions with a large spoon rather than trying to cut into squares.
