Number Of Ingredients 4

1 package Chicken breasts or tenders
1 piece Bay leaf
2 cans chicken broth
1 piece Garlic, jalapeno, or spices

Steps:

  • 1) Trim the number of skinless boneless chicken breast you need.
  • 2) Dump chicken into crock pot with salt and pepper to taste, a bay leaf and enough broth to cover the chicken about half way. Do not cover completely. Add garlic, green chilies or other spices depending on your needs.
  • 3) Cook for 4 hours on high.
  • 4) Remove from crock pot. It is actually a bit hard to get out of the crock pot because it is falling apart! Shred with 2 forks, it takes only a few minutes to pull apart.

1 large butternut squash, peeled and cut into large cubes (about 8 cups)
1 large onion, chopped
1 carrot, peeled and chopped
3 cloves garlic, minced
4 sprigs thyme
1 sprig sage
3 c. low-sodium chicken (or vegetable) broth
Kosher salt 
Freshly ground black pepper
Pinch of cayenne
Heavy cream, for serving
Freshly chopped parsley, for garnish

Steps:

  • In a large slow cooker, combine butternut squash, onion, carrot, garlic, thyme, and sage. Pour in broth and season with salt, pepper, and a pinch of cayenne. 
  • Cover and cook until squash is very tender, on low for 8 hours or on high for 4 hours. Remove herb sprigs and use an immersion blender to blend soup until smooth.
