German lye bread recipe - Simple Chinese Food image

hello, i'm yinghan

Do you know lye bread? Recently, they are often planted on the Internet from the lye dumplings of an internet celebrity bakery run by a celebrity couple in Beijing.

In fact, the most classic lye bread shape is the pre-knot. Even if many people have never seen it before, don’t you think it’s very familiar?

When I haven’t eaten this bread before, I saw its caramel-colored crust. I always think it has a sweet taste similar to a doughnut. In fact, it has a slightly salty and tough taste. The first time I tried it, it was completely in my mind. The taste is different in the imagination.

This bread can be described as a European legend. Search for the origin of alkaline water bread on the Internet. You can see many versions of interesting legends. In short, this bread is authentic and authentic from Europe. It is common in Germany and Austria like Chinese steamed buns. same.

When you see Brezen, Pretzel, Bavarian lye bread, beer bread, beer knot, German lye bread, they are all it.

Low-oil, sugar-free, no fermentation required, it is a super healthy fast bread without worrying about calories!

Provided by Yinghan's fast kitchen

Total Time 30 minutes

Yield 2

Number Of Ingredients 7

400 grams High-gluten flour
15 grams lard
5 grams yeast
4 grams salt
200 g Shimizu
20 grams baking soda
500 g 40 degree hot water

Steps:

  • First mix 400g high-gluten flour, 5g yeast, 4g salt, 15g lard dry ingredients
  • Then pour 200g of water
  • First use the chef machine at low speed to mix the ingredients evenly
  • Shift to high gear and mix into a smooth dough (about half an hour)

If you knead it by hand, because this bread has less moisture and the dough is harder, it is more difficult to knead by hand, so you need to knead more until the dough is smooth.
  • Because the lye bread has less moisture and is harder in texture, it can’t be kneaded out of the glove film. If the dough is kneaded, it’s fine to pull a small piece with such a thick film and pull the zigzag-shaped hole in the middle.
  • Divide the dough into 8 smaller portions
  • Knead all the small doughs
