Originally from a Cooking Light recipe we have adapted this one to make everything from mac and cheese to broccoli casserole and it is always a hit at our house. Adjust the seasoning and type of cheese used to your needs. Weight Watchers: 14 points for whole recipe.

1 1/2 cups nonfat milk
2 1/2 tablespoons flour
salt
pepper
3/4 cup low-fat sharp cheddar cheese, shredded
1/3 cup fat-free mayonnaise
4 ounces fat free cream cheese, softened

Steps:

  • Combine milk, flour, salt, and pepper in a large saucepan over medium-high heat. Bring to a boil. Cook 1 minute or until thick, stirring constantly.
  • Remove from heat. Add remaining ingredients and adjust salt and pepper to taste.

Use this brilliant low-fat cheese sauce recipe when making lasagne or macaroni cheese. Eat totally guilt free and reduce the calories by using skimmed milk and omitting butter.

75 g

(3oz) mature Cheddar or Gruyère cheese

25 g

(1oz) plain white flour

450 mL

(3/4 pint) skimmed milk

25 g

(1oz) freshly grated Parmesan cheese

Salt and freshly ground black pepper

Steps:

  • Grate the Cheddar or Gruyère cheese. Place the flour in a saucepan, slowly whisk in the milk and bring to the boil, stirring continuously. Reduce the heat and simmer gently for 1min.

    Remove from the heat. Stir in grated Cheddar and Parmesan and season to taste. Cover with a piece of damp greaseproof paper and set aside until needed.

    Serve with served with cooked baby cauliflower and a garnish of chopped chives.
