1/2 cup butter (room temperature)
1 cup Swerve confectioners
1 teaspoon vanilla extract
2 tablespoons heavy cream (or coconut milk)
1/2 teaspoon vanilla liquid stevia (optional)

Steps:

  • Add all ingredients into a stand mixer and blend on high until smooth.
  • Continue to add additional cream for desired consistency. Makes 1 1/4 cup or 10 ounces.
  • Does not need refrigeration once on cookies.
  • Unused frosting can be stored in an airtight container for up to 2 weeks or frozen for up to 3 months.

4 1/2 cups powdered sugar
1/8 teaspoon salt
1 to 2 tablespoons Land O Lakes® Half & Half
1 tablespoon vanilla extract

Steps:

  • Set butter on counter 30-60 minutes before using to soften.
  • Beat butter in bowl at medium speed 2 minutes or until creamy and smooth.
  • Gradually add powdered sugar and salt alternately with half & half and vanilla, beating at low speed and scraping bowl often, until well mixed. Beat at medium speed 1-2 minutes or until creamy, smooth and fluffy.
