If you like Chicken Breasts, and Chicken Alfredo in particular, this recipe is going to blow your socks off!! SOOO easy, SOOOO yummy, and if you have any leftovers, they disappear fast! Great company dish, as it makes a lovely presentation. The flavor from the roasted peppers was tantalizing, next time I'll add 1/2 cup, instead. From Better Homes & Gardens Phase I Low Carb Recipes.

6 medium boneless skinless chicken breasts
salt and black pepper
1 tablespoon cooking oil
1 cup whipping cream
4 ounces asiago cheese (1 cup) or 4 ounces parmesan cheese, finely shredded (1 cup)
1/3 cup roasted red pepper, drained and cut into thin strips
3 tablespoons fresh basil, finely shredded

Steps:

  • Sprinkle chicken with salt and pepper. In a 12-inch skillet brown chicken breasts in hot oil about 10 minutes, turning to brown evenly. Transfer chicken to a 3-quart rectangular baking dish; set aside.
  • For sauce, in a medium saucepan beat whipping cream with a wire whisk or rotary beater for 1 to 2 minutes or until thickened. Heat over medium heat just until simmering. Reduce heat to medium-low. Gradually whisk in cheese until melted.
  • Pour sauce over chicken breasts in dish; top with sweet peppers. Bake, uncovered, in a 350 degrees oven for 15 to 20 minutes or until chicken is no longer pink (170 degrees F). Sprinkle with basil.

A lighter version of the traditional classic. I really like cheese so I have a little extra slice of provolone on top of my chicken, but for those looking to trim the fat and calories, you can leave that out of the recipe. This dish goes well with a small serving of whole wheat angel hair pasta and steamed broccoli.

Number Of Ingredients 12

¼ cup dry bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
¼ teaspoon dried oregano
¼ teaspoon garlic powder
sea salt and ground black pepper to taste
2 egg whites
4 skinless, boneless chicken breast halves
1 cup light spaghetti sauce
cooking spray
4 slices light provolone cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix bread crumbs, Parmesan cheese, thyme, rosemary, oregano, garlic powder, salt, and pepper in a small dish.
  • Whisk egg whites together in a shallow bowl. Coat each chicken breast in egg whites and roll in the bread crumb mixture.
  • Spray a large skillet with cooking spray; set over medium-high heat. Cook chicken until coating starts to brown, about 3 minutes per side.
  • Spray a baking dish with cooking spray and transfer chicken to the dish. Spread 1 1/2 tablespoons spaghetti sauce over each chicken breast. Cover sauce with a slice of provolone cheese. Use the remaining sauce to cover the chicken.
  • Bake in the preheated oven until cheese is melted and chicken is no longer pink in the center, about 20 minutes.
