SOBA NOODLES WITH LOTUS LEAF BUN RECIPE - SIMPLE CHINESE FOOD

Soba noodles with lotus leaf bun recipe - Simple Chinese Food image

I want to make soba noodle buns, but I feel a bit monotonous, and the finished product is not attractive. It suddenly occurred to me that it can be made into lotus leaf steamed bun, marinated pork with sauce or fried dishes. It is convenient and easy to arouse appetite.
I still want to add more whole grains to make my own staple food, which is healthier. The benefits of buckwheat are many.
?Buckwheat has antibacterial, anti-inflammatory, anti-cough, anti-asthmatic, and expectorant effects. Therefore, buckwheat has the reputation of "anti-inflammatory food". In addition, these ingredients also have the effect of lowering blood sugar. Chinese medicine believes that buckwheat is sweet and flat in nature, has the effects of invigorating the spleen and replenishing qi, appetizing and widening the intestines, eliminating food and resolving stagnation. Buckwheat is a suitable diet for women, children and the elderly. It is more suitable for people with diabetes.
2. Buckwheat is rich in dietary fiber, its content is 10 times that of ordinary refined rice; buckwheat contains iron, manganese, zinc and other trace elements also richer than ordinary grains. Buckwheat has the function of cleaning up the waste deposits in the intestines, so folks call it "Jingchangcao". While eating fine grains, regular consumption of buckwheat is good for the body.
3. Do not eat too much buckwheat at a time, otherwise it will easily cause indigestion. People with deficiency of the spleen and stomach, poor digestion, and frequent diarrhea should not eat it.

Total Time 15 minutes

Yield 2

Number Of Ingredients 5

100 g Soba noodles
200 g All-purpose flour
150 grams water
3 grams yeast
10gram Corn oil

Steps:

  • Soba noodles and all-purpose flour are mixed, the yeast powder is melted with warm water, heated with warm water, stirred with chopsticks to form a floc, and then kneaded into a smooth dough.
  • Cover with plastic wrap and leave it in a warm place to ferment to double the size. Dip dry powder with your finger and poke it.
  • Knead the dough, exhaust, and divide it into 8 doses evenly
  • Take a potion and roll it into a round or round shape
  • Brush corn oil on the surface
  • fold
  • Use a clean comb or a toothed knife back (my knife back happens to have teeth) to press out the pattern. The pattern should be pressed deeper to avoid flattening after the second fermentation.
  • Use the back of a comb or a knife to push in on the top of each pattern to make it recessed, more like a lotus leaf
  • On the stem of the lotus leaf, use your index finger and thumb to pinch out the sharp corners, so that a lotus leaf cake is ready. Complete the others in sequence, in a hot pot under cold water, steam for 15 minutes after steaming, stuffing for two minutes
  • The lotus leaf cake is ready
  • With my own homemade capers and minced pork and braised beef (if you are interested, please refer to my recipe for capers minced pork and braised beef). It's very convenient to eat.

THE INFORMAL CHEF: LOTUS LEAF BUN ???
Mar 25, 2016 · Lotus leaf bun is basically a bao shaped to look like a folded lotus leaf with an opening in the middle for filling. It is made with an oval shape dough folded into half. Lines or patterns are then added to make it resemble a lotus leaf. Although I like the authenticity of making it look like a lotus leaf, I like it more without the patterns, just a clean cut U-shaped bun.
