½ cup extra firm tofu cubed
½ tsp toasted sesame oil
¼ tsp salt
1 pinch pepper
½ tsp toasted sesame oil (or olive oil)
1 medium garlic clove (minced)
2 cups vegetable broth
1 cake Lotus Foods Organic Millet & Brown Rice Ramen
1 tbsp soy sauce or tamari
Sriracha (to taste)
1 tbsp green onion (finely chopped)
1 pinch red pepper flakes (optional)
2 baby bok choy (sliced in half)
¼ cup mushrooms (thinly sliced)
½ cup broccoli (chopped into small pieces)
¼ cup carrots (thinly sliced)
1 pinch sesame seeds (black or white)
1 tsp nori seaweed (thinly sliced into small pieces)

Rasta Pasta is a newer Jamaican dish, popular in many Caribbean restaurants today, commonly made with pasta, cream, peppers and, of course, jerk seasoning. Enjoy this vegetarian version as it is or serve it with jerk chicken or shrimp.

Number Of Ingredients 13

4 cakes Lotus Foods Organic Millet & Brown Rice Ramen
1½ tbsp olive oil
½ onion
½ red pepper (sliced)
½ green pepper (sliced)
½ yellow pepper (sliced)
4 cloves garlic (minced)
1 tbsp jerk seasoning
1 can (13½ oz coconut milk)
Salt & pepper (to taste)
1 tsp paprika
4-5 sprigs of thyme
¼ cup shredded parmesan cheese

Steps:

  • Cook ramen noodles per directions on package.
  • In a sauté pan, heat oil and cook onion and peppers for ~5-6 mins until softened.
  • Add garlic and jerk seasoning and cook for another 2-3 mins.
  • Pour in coconut milk and season with salt, pepper, paprika, and thyme.
  • Let the sauce simmer for 5 mins and then add the noodles.
  • Cook for a few more minutes then add the parmesan cheese.
  • When the sauce thickens, it’s ready to serve.
  • Enjoy!
