1 1/2 lbs london broil beef or 1 1/2 lbs flank steaks
5 tablespoons soy sauce
5 tablespoons Worcestershire sauce
10 tablespoons brown sugar

Steps:

  • Mix the last three ingredients together in a ziploc bag.
  • Add meat and marinate, refrigerated, for 6 hours.
  • Remove meat from marinade; discard marinade.
  • Broil steak to your favorite doneness.

2 lbs flank steaks
1/2 cup low sodium soy sauce
1/4 cup olive oil
1/2 lemon, juice of
1 teaspoon liquid smoke
1 tablespoon Worcestershire sauce
1 tablespoon sugar
4 garlic cloves, crushed
1 tablespoon fresh ground pepper

Steps:

  • Lightly score meat on top and bottom.
  • Mix marinade and soak meat for several hours, then barbecue.
  • NOTE: I removed the 1/8 t kosher salt after the reviews, although I suspect those reviewers probably used regular soy sauce rather than the low sodium as listed. When I use the Italian dressing, I don't use the kosher salt, but if I use olive oil, I do use it.

  • In a medium bowl, whisk together oil, lemon juice, brown sugar, Worcestershire, and garlic.  Season steak generously with salt and pepper, then rub oil mixture all over. Let sit at room temperature for an hour or refrigerate up to overnight. Preheat broiler. Brush off garlic then place steak on a sheet pan. Place pan on top rack (closest to the heating element) and broil 6 to 7 minutes, until top is lightly charred. Flip and broil 4 to 5 minutes more, until internal temperature reaches 125° (for medium rare).  Let rest 10 minutes before carving. Serve with herb butter.  In a small bowl, mix butter with herbs, lemon zest, salt, and red pepper flakes until smooth. Refrigerate until ready to use.
