Your whole crew is going to love this delicious roast. It's an easy to make, economical meal. We loved the extra tang and kick pepperoncini peppers give the gravy (they're a sweet, mild chili pepper). You can even add a bit of their juice to the Crock Pot for even more flavor. This is a hearty set it and forget it slow cooker meal.

Number Of Ingredients 6

2 pound(s) London broil
1 package(s) ranch style dressing mix
1 package(s) au jus gravy mix
6 medium pepperoncini peppers
1/2 stick(s) butter, cut up
8 medium red potatoes, whole

Steps:

  • Spray bottom and sides of a 6 quart oval Crock Pot with cooking spray to make clean up easier.
  • Place London broil in the bottom of Crock Pot.
  • Sprinkle the ranch dressing mix on the meat. Spread it around so it covers the top.
  • Sprinkle the au jus mix on the meat. Spread it around so it covers the ranch mix.
  • Remove stems and place the pepperoncini on top of the powdered mixes.
  • Add the cut up butter to the top of the mixes.
  • Add the potatoes around the outer edge of the meat. They do not have to sit on the bottom. DO NOT ADD ANY LIQUID!!!!
  • Cover and cook for 4 hours on high or 8 hours on low.
  • Remove potatoes. Cut meat into serving pieces and stir into sauce in bottom of Crock Pot. Return potatoes to pot. Serve

2 cloves garlic, minced
1 (10.75 ounce) can cream of mushroom soup
½ cup water
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt

Steps:

  • Place the London broil in a slow cooker; add the garlic, mushroom soup, water, basil, oregano, and salt; cover; cook on low 6 to 7 hours.
