May 04, 2020 · Based on this recipe (94% hydration!) I’m still working out the Liguria Bakery pizza, green onion version. Last time I tried putting sauce on after 15 minutes of baking and got close. The Liguria Focaccia bakes at 800º so putting the sauce on before the bake does not work at 475º/500º for 20 odd minutes, it gets too dry and burns.
