Quick Rotini with Sausage and Tomato Sauce Recipe | MyRecipes image

You can substitute spinach for the arugula, if you like. For less heat, decrease or omit the crushed red pepper.

Yield Serves 4 (serving size: 1 1/2 cups pasta and 1 teaspoon cheese)

Number Of Ingredients 13

8 ounces uncooked rotini
Cooking spray
3 (4-ounce) sweet turkey Italian sausage links, casings removed
1?½ cups finely chopped arugula, divided
1 cup minced onion
1 tablespoon chopped fresh oregano
½ teaspoon crushed red pepper
4 garlic cloves, thinly sliced
2 cups unsalted canned crushed tomatoes
½ teaspoon sugar
½ teaspoon freshly ground black pepper
¼ teaspoon kosher salt
4 teaspoons grated Parmesan cheese

Steps:

  • Bring a large saucepan of water to a boil. Add pasta; cook 7 minutes or until al dente. Drain pasta in a colander over a bowl, reserving 1 cup cooking liquid.
  • Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add sausage to pan; cook 5 minutes or until browned, stirring to crumble. Add 1 cup arugula, onion, oregano, crushed red pepper, and garlic; cook 2 minutes, stirring frequently.
  • Add reserved 1 cup cooking liquid, tomatoes, sugar, black pepper, and salt to pan; bring to a boil. Add pasta; cook 2 minutes. Stir in remaining 1/2 cup arugula. Divide pasta mixture among 4 shallow bowls; top with Parmesan cheese.

Sometimes simple and easy is best, as in this no-frills shrimp, broccoli, and pasta dish. Try switching to whole-grain rotini for a nutrition boost. You can use fresh or frozen shrimp in this recipe, just make sure to look for the peeled and deveined kind without any additives.

Yield Serves 4 (serving size: about 1 1/2 cups)

Number Of Ingredients 10

6 cups water
8 ounces uncooked rotini
3 cups packaged fresh broccoli florets
2 tablespoons olive oil
1 pound peeled and deveined large shrimp
2 teaspoons grated lemon rind
2 1/2 tablespoons unsalted butter
2 tablespoons fresh lemon juice
5/8 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Bring 6 cups water to a boil in a large saucepan. Add pasta, and cook according to package directions, omitting salt and fat. Add broccoli during last 3 minutes of cooking; drain. Heat a large skillet over high heat. Add oil; swirl to coat. Add shrimp to pan; sauté 2 minutes. Stir in lemon rind; sauté 1 minute. Add pasta mixture, butter, lemon juice, and salt to pan. Sauté 1 minute, stirring occasionally; toss to coat. Sprinkle with black pepper; serve immediately.
