Forget iceberg; the traditional Wedge salad is better with Romaine lettuce and a healthier ranch-style dressing.

2 heart of romaine, quartered lengthwise and cores removed
¼ cup chopped fresh chives
2 slices cooked bacon, crumbled
2 ounces crumbled blue cheese
1/2 cup Buttermilk Ranch Dressing, (recipe follows)

Steps:

  • Place 2 romaine quarters on each of 4 salad plates. Sprinkle with chives, bacon and blue cheese. Drizzle with Buttermilk Ranch Dressing.

Classic wedge salad meets chopped salad in this easy side salad dish made with lettuce, bacon, tomatoes, blue cheese and chives with a light homemade blue cheese dressing.

6 cups chopped Romaine (Butter or Iceberg lettuce)
2 small tomatoes (diced (or 1  cup halved cherry tomatoes))
5 slices cooked center cut bacon
1/4 cup crumbled blue cheese
1/2 cup Homemade Blue Cheese Dressing
chopped chives (for garnish)

Steps:

  • Place the lettuce in a large platter, top with tomatoes, crumbled bacon, blue cheese and serve with blue cheese dressing.
  • Top with chopped chives.

Dump charcoal into a fire pit or grill (under grill grate); let burn, uncovered, until smoldering, about 30 minutes. Fan the outer layer of ash off coals. Rub cabbage with 1 tablespoon oil; place directly on hot coals. Cover and cook, turning occasionally, until tender and charred on all sides, 2 hours and 30 minutes to 3 hours. Remove from coals; let stand until cool enough to handle, about 30 minutes. Discard outer charred leaves. Cut cabbage into 6 wedges; remove core. Whisk together yogurt, mayonnaise, buttermilk, lemon juice, garlic, salt, and remaining 1 tablespoon oil in a bowl until smooth. Drizzle over wedges. Sprinkle with feta, chives, and sumac.
