I don't know where I got this recipe, but it makes the best loaf of white bread that I have tried so far. It makes a nice light white bread, good for everything from sandwiches to toast to whatever you like to use white bread for. The prep time is the entire time the dough is in the bread machine.

Total Time 2 hours

Prep Time 1 hours 30 minutes

Cook Time 30 minutes

Yield 10-12 serving(s)

Number Of Ingredients 6

1 1/4 cups milk
2 teaspoons shortening
3 cups bread flour
1 tablespoon sugar
3/4 teaspoon salt
1 teaspoon yeast

Steps:

  • Add all ingredients to your bread machine in the order reccomended by the manufacturer.
  • Set to"dough" cycle.
  • When dough cycle finishes, remove dough from bread machine and punch down and knead on a floured surface.
  • Spray a loaf pan with cooking spray, set dough into the pan, and set aside in a warm place (i set mine on the back burner of my stove-- it gets hot while the stove warms up, and causes the bread to rise quickly) and let the dough rise to just about the top of the loaf pan.
  • Bake at 375 for 30 minutes.
  • When dough is done, tap on the top of the loaf.
  • If it sounds hollow inside, it is done.
  • If not, cook in additional 5 minute increments, till bread is done.
  • Let cool a bit before cutting, or the bread will get smushed.

SOFTEST SOFT BREAD WITH AIR POCKETS USING BREAD MACHINE ...

Softest Soft Bread with Air Pockets Using Bread Machine ... image

I played around with basic white bread recipes quite a bit and finally have come up with the perfect soft, fluffy, white bread with air pockets. Maybe a little too soft to slice right away. But if you let it cool a bit, it shouldn't be a problem. Toasted with a little butter and jam, it is a slice of heaven!

LIGHT (ALMOST AIRY) SOURDOUGH BREAD RECIPE - FOOD.COM
light (almost airy) sourdough bread recipe - food.com image
Not quite airy, but close. I combined several recipes to get a loaf like I'd buy in the store. The sour flavor will depend on what type of starter you use, and how strong it is. I use a 2 week old starter, that was frozen and thawed the night before- it had a mild flavor. I basically used Recipe #13750 with milk instead of water. Serve warm with homemade Recipe #182268 for a real treat. I suppose this could be made in a bread machine - but I haven't tried it. I find it very relaxing to mix and knead a loaf of bread by hand, and then to make butter while its baking :-) I think my loaf pan must have be over-sized, because this recipe seems to make two loafs. I like everything sweet, including my sour dough bread. If you prefer less sugar, just use a tablespoon or two to proof the yeast.

  • Immediately brush the top with butter, so keep the crust moist. I like to use an electric knife to slice the bread and get beautiful, even slices.

  • Bake ciabatta for 20-25 minutes without EVER opening the oven. After 10 minutes in the oven reduce the heat to 400F. When it’s golden brown, or may seem even slightly burned that is it. Your ciabatta bread has just reached its perfection and all you have left is let it cool for 15-20 on the wire rack.

AIRY & LIGHT BREAD RECIPE | BOB'S RED MILL
The texture of the bread is mainly dependent on how much gas is in the dough. Carbon dioxide is responsible for all the bubbles that make holes in bread, making it lighter and fluffier. Because gas is created as a result of yeast growth, the more the yeast grows, the more gas in the dough and the more light and airy your bread loaf will be.
