EARL GREY YOGURT CAKE RECIPE | BON APPéTIT

Earl Grey Yogurt Cake Recipe | Bon Appétit image

A tea cake that's true to its name, this loaf harnesses the power of citrusy Earl Grey tea for its distinct flavor. Lemon poppyseed can't hold a candle. Because high quality loose-leaf tea is often much more fragrant and flavorful than tea bags, you won’t need as much of it. If you’re using tea bags, just snip them open and measure out the tea inside.

Provided by Molly Baz

Yield Makes one 9x5" or 8½x4½" loaf

Number Of Ingredients 11

1 cup vegetable oil, plus more for pan
2 cups (250 g) all-purpose flour
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt
½ tsp. baking powder
½ tsp. baking soda
2 large eggs
1¼ cups (250 g) granulated sugar
1 cup plain whole-milk yogurt
3 Tbsp. loose-leaf Earl Grey tea or ¼ cup tea from bags
2 tsp. vanilla extract
1 Tbsp. raw or granulated sugar

Steps:

  • Preheat oven to 325°. Lightly coat a 9x5" or 8½x4½" loaf pan with vegetable oil and line with parchment paper, leaving overhang on long sides. If you’re not sure what size your loaf pan is, measure it with a ruler from inside edge to inside edge for both the length and width. If you measure from the outside edge, you’ll get an inaccurate reading of the width of the pan, and your cake may end up overflowing! It's the actual empty space of the pan where the cake bakes that matters here, not the width of the entire pan including its edges.
  • Whisk 2 cups (250 g) all-purpose flour, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, ½ tsp. baking powder, and ½ tsp. baking soda in a medium bowl to combine.
  • Vigorously whisk 2 large eggs and 1¼ cups (250 g) granulated sugar in a large bowl 1 minute (seriously, time it!); mixture should be pale yellow and frothy. Whisk in 1 cup plain whole-milk yogurt, 3 Tbsp. loose-leaf Earl Grey tea (or ¼ cup tea from bags), and 2 tsp. vanilla extract.
  • Gradually stream in 1 cup vegetable oil, whisking constantly until incorporated. (Place a kitchen towel under your bowl to stabilize it so that you have two free hands.) Add dry ingredients and whisk to combine. Scrape batter into prepared pan and smooth top. Gently tap pan against surface to eliminate any air bubbles.
  • Sprinkle evenly with 1 Tbsp. raw or granulated sugar. Bake cake until a skewer or toothpick inserted into the center comes out clean, about 1 hour.
  • Let cool 15 minutes in pan, then run a butter knife or offset spatula between the cake and pan to release. Lift it out using parchment overhang and transfer to a wire rack. Serve warm or room temperature (or even better, toast slices and slather them with butter!).

MARY BERRY'S SCONES RECIPE - BBC FOOD

Mary Berry's scones recipe - BBC Food image

Mary Berry's scones are the perfect easy tea-time treat, whether jam-and-cream-topped (in whichever order you like), plain or packed with sultanas. Equipment: You will need a fluted 5cm/2in cutter.

Provided by Mary Berry

Prep Time 30 minutes

Cook Time 30 minutes

Yield Makes 16 small scones

Number Of Ingredients 9

450g/1lb self-raising flour
2 level tsp baking powder
50g/1¾oz caster sugar
100g/3½oz butter, softened, cut into pieces
2 free-range eggs
a little milk
handful sultanas (optional)
strawberry jam
clotted cream

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7. Lightly grease two baking trays.
  • Put the flour, baking powder and sugar in a large bowl. Add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
  • Crack the eggs into a measuring jug, then add enough milk to make the total liquid 300ml/10fl oz. Stir the egg and milk into the flour – you may not need it all – and mix to a soft, sticky dough.
  • Turn out onto a lightly floured work surface, knead lightly and work in the sultanas, if using. Roll out to a rectangle about 2cm/¾in thick.
  • Cut into as many rounds as possible with a fluted 5cm/2in cutter and place them on the prepared baking trays. Brush the tops of the scones with a little extra milk, or any egg and milk left in the jug.
  • Bake for 12–15 minutes, or until the scones are well risen and a pale, golden-brown colour. Lift onto a wire rack to cool. Eat as fresh as possible.
  • To serve, split the scones and serve with strawberry jam on the plain scones along with a good dollop of clotted cream.

ROAST TURKEY | JAMIE OLIVER TURKEY RECIPES

  • GET AHEAD 1. Check the main turkey cavity for the bag of giblets; if they’re in there, remove and tip them into your roasting tray, discarding the bag. The added flavour they’ll give your gravy will be incredible – trust me. 2. Peel the onions, wash the carrots and roughly chop with the celery or the leek tops, then add to the tray with the unpeeled garlic cloves. 3. Place your stuffing in the neck cavity, then pull the skin back over it and tuck it under the bird. You’ll get a good contrast between the soft, juicy stuffing here inside the turkey, and the crispier stuff you can bake separately in a dish. 4. Place the softened butter on a board and press down with your hands. Pick over 3 sprigs of thyme, finely zest ½ a clementine and season with sea salt and freshly ground black pepper, and scrunch all together to make your flavoured butter. 5. Halve the clementines and place in the main turkey cavity with the remaining thyme – not filling it too full allows hot air to circulate, cooking the bird from the inside out and from the outside in. 6. Get your turkey and use a spatula to work your way between the skin and the meat. Start at the side of the cavity just above the leg and work gently up towards the breastbone and towards the back so you create a large cavity. Pick up your butter and push it into the cavity you’ve created. Use your hands to push it through the skin right to the back so it coats the breast meat as evenly as possible. Do the same on the other side. 7. Drizzle the turkey all over with 1 tablespoon of olive oil and generously sprinkle from all sides with salt and pepper. 8. Cover the turkey snugly with tin foil and place it on top of the trivet in the tray. ON THE DAY 1. Take your turkey out of the fridge 1 hour before it’s due to go in the oven. 2. Preheat the oven to 180°C/350°F/gas 4. 3. You want to cook a higher-welfare bird for 25 to 30 minutes per kg and a standard bird is 35 to 40 minutes per kg. For a 4kg bird, pop it in the oven for 1 hour 40 minutes, basting several times with all the lovely juices in the tray and covering with foil when beautifully golden brown. 4. The simplest way to check it’s cooked is to stick a knife into the thickest part of the thigh – if the juices run clear, it’s done. 5. Use heavy-duty tongs to lift up your bird so all the juices run from the cavity into the tray, then transfer the turkey to a platter and leave to rest for up to 2 hours while you crack on. You can cover it with a double layer of tin foil and a clean tea towel to keep warm, if you like. 6. Skim away the fat from the turkey tray, save it in a jar, and leave to cool. When cold, transfer to the fridge for cooking with at a later date. CARVING THE TURKEY 1. Once the turkey has rested, it’s time to carve. There are two ways you can do this. - The first method is to remove the wings, slice the skin beside the legs, then pull out and chop the legs off. You can either slice or pull this brown meat – it’s so tasty. Keep it warm while you move on to the breast meat. Use the full length of the knife in a nice smooth action to slice through the breast meat, transferring it to a platter as you go. - Alternatively, remove the leg as above, then feel where the backbone is and cut with the length of your knife all the way down beside it until you hit the carcass. You can then lift the whole breast off the bone. Remove to a board and slice.

ANYTHING GOES CHRISTMAS STRUDEL | JAMIE OLIVER RECIPES
At Christmas time, like any other, the Oliver household has lots of leftover mince pies, Christmas pudding, mixed nuts, chocolate, clementines and posh biscuits. I’ve used a humble pack of filo here to bring all those festive flavours together in layers of crisp, golden pastry. Delicious.

    1. Preheat the oven to 180ºC/350ºF/gas 4. Place the butter in a small saucepan on a low heat. As it melts, finely grate over the clementine zest and squeeze in the juice, add the cinnamon, then bring to the boil and turn the heat off.
    2. Lay out 4 sheets of pastry on a clean tea towel, slightly overlapping, so they cover the tea towel completely, with a little overhang at one of the shorter ends. Working quickly so your pastry doesn’t dry out, drizzle over half of the spiced melted butter, then brush all over, using it to secure the pastry where it overlaps – this will help protect the pastry and flavour it. Sprinkle over 1 heaped teaspoon of sugar to add a nice bit of crunch, then carefully layer the rest of the pastry sheets on top and brush over half of the remaining melted butter.
    3. Use your hands to crumble the leftover goodies over the pastry from a height, making sure they are evenly distributed, and leaving the two shortest edges empty (about 10cm). Bash up the nuts in a pestle and mortar, then add them to the party and break over the chocolate. Using a box grater, coarsely grate over the fruit (cores and all), break in the biscuits, then drizzle everything with the honey.
    4. Fold the shortest edges inwards, then lift up your tea towel at one of the longest ends and use it to help you carefully roll up your strudel.
    5. Brush a large non-stick baking tray with a little of the remaining butter and confidently transfer the strudel to the tray. Brush or rub it all over with the last of the butter, then sprinkle over a little sugar. Bake on the bottom of the hot oven for 35 minutes, or until crisp, golden, and gorgeous.
    6. Once the time’s up, leave to cool, then dust with icing sugar and use a serrated knife to cut the strudel into 5cm slices. Delicious served with hot custard, a scoop of vanilla ice cream, or a dollop of Greek-style yoghurt.
