Yield 1 - 9 inch deep dish pie

1 (9 inch) unbaked deep dish pie crust
¾ cup white sugar
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground ginger
¼ teaspoon ground cloves
2 eggs
1 (15 ounce) can LIBBY'S® 100% Pure Pumpkin
1 (12 fluid ounce) can NESTLE® CARNATION® Evaporated Milk

Steps:

  • Preheat oven to 425 degrees F.
  • Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
  • Bake for 15 minutes. Reduce temperature to 350 degrees F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

4 cups All purpose flour
2 cups Rolled oats
2 teaspoons Baking soda
2 teaspoons Cinnamon
1 teaspoon Salt
1 1/2 cups Butter or margarine
1 cup Sugar
1 large Egg
1 teaspoon Vanilla
16 ounces Pumpkin Libby's solid packed
1 cup Chocolate chips
2 cup Brown sugar firmly packed

Steps:

  • "Preheat oven to 350. combine flour, oats, soda, cinnamon, and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin mixing well after each addition. Stir in chocolate chips. For each cookie , drop 1/4 cup dough onto lightly greased cookie sheet; more dough to form stem. Bake 350. 20-25 minutes, until cookies are firm and lightly browned. Remove from cookie sheets; cool on racks. Decorate using icing or nuts. Yields about 32 cookies. Variation substitute 1 cup of raisins for cholate chips."
