Fresh salmon needs very little preparation. These salmon fillets are cooked in good, sweet butter and minced garlic, and then sprinkled with a little lemon juice. If you'd like a little more kick and a fancy presentation, caramelize onions and serve them atop the cooked salmon.

2 tablespoons unsalted butter
2 teaspoons minced garlic
1 teaspoon lemon pepper
2 (4 ounce) fillets salmon
1 lemon

Steps:

  • Season salmon fillets on both sides with lemon pepper.
  • In a large skillet, melt butter over medium high heat. Stir in garlic. Place salmon in pan. Cook for 10 minutes per inch of thickness, or until fish flakes when tested with a fork. Flip fillets halfway through cooking to brown on both sides. Sprinkle with lemon juice before serving.

2 tablespoons butter, melted
2 tablespoons fresh lemon juice
1 teaspoon chopped fresh parsley
½ teaspoon garlic powder
salt and ground black pepper to taste
1 tablespoon whole black peppercorns
4 salmon fillets
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk together the butter, lemon juice, parsley, garlic powder, salt, and pepper. Stir in the peppercorns. Dip the salmon into the sauce so the flesh side is coated, and set on a plate,
  • Heat the olive oil in an ovenproof skillet over medium-high heat. When the oil begins to smoke, add the salmon, placing it skin side up into the skillet. Cook for until the flesh is seared and golden brown, about 1 minute.
  • Place the skillet into the preheated oven, and cook until the salmon flakes easily with a fork, 10 to 12 minutes. Serve immediately.

Kebabs are fun and easy ways to serve a weeknight meal. Your family may get tired of salmon filets and a side of vegetables but serve it as a tasty kebab and it looks like an entirely different dish. This marinade goes well with both fish and chicken. Add your favorite seasoning blend to the marinade to vary up the flavor. For these salmon kebabs, we added lemon pepper seasoning to the marinade, then added 24 pieces of skinless salmon. Make sure salmon pieces are about the same size so they all cook thoroughly.  Add lemon slices and 24 slices of zucchini. You can use yellow squash if you wish, or a combination of the two. Chill the salmon kebab marinade and all other ingredients together for at least 2 hours or up to 4 hours. Don’t chill any longer or the acid in the marinade will break down the proteins in the salmon and affect its texture. The kebabs are only on the grill about 6 minutes but, if you use wooden skewers, it is always a good idea to soak them in water for about 10 minutes, so they don’t burn on the grill.
