Karla's mother's lemon meringue pie is easy to prepare and delicious. It's sweet with the perfect amount of lemony tartness. You will definitely want to make both pies ... they will get eaten up fast.

FOR THE LEMON PIE:
2 package(s) lemon pudding mix, cook & serve (4.3 oz each)
1 1/2 cup(s) sugar
6 large egg yolks; lightly beaten
1/3 cup(s) lemon juice concentrate
5 2/3 cup(s) water, cold; divided
FOR THE MERINGUE:
6 large egg whites
2/3 cup(s) sugar

Steps:

  • Thaw 2 pre-made 9" deep dish pie shells (or you can make your own crusts) and using a fork prick the shell all around, so the crust doesn't puff up during the baking time.
  • Bake the pie shells in a pre-heated 400° oven for 10-12 minutes until lightly browned; set aside to cool.
  • Divide the egg yolks and reserve the whites for the meringue, making sure there is NO egg yolk in the whites. I remove the white membrane from the reserved egg whites also. Keep the egg white at room temperature.
  • In a microwaveable safe glass bowl, combine the pudding mix, sugar, whipped egg yolks, 1/3 cup of lemon juice, and 2/3 cup of the water. Whisk the ingredients until all is combined.
  • Add the remaining 5 cups of water.
  • Place in the microwave on full power and cook (STIRRING EVERY 3 MINUTES) for about 16-18 minutes. Note: If you use hot water it would be less cooking time. I use cold because that's the way mom wanted it done.
  • The pudding will be semi-thick. The pudding will thicken more as it cools.
  • Fill each of the pre-baked pie crusts and set aside while you make the meringue.
  • In a large bowl, add the reserved egg whites and beat on high just until it starts to get foamy.
  • Add 1 Tbsp of the sugar at a time, beating between each addition, until all the sugar is used.
  • Continue to beat on high until stiff peaks form in the egg whites.
  • Spoon half of the firm meringue onto each pie and spread out to seal the edge of the pie.
  • Using your spatula or spoon, tap the top of the meringue to lift up peaks on the pie.
  • Bake the pie on the center oven rack for 10-12 minutes @ 350F until the meringue is a golden brown.
  • Note: It's best if you chill this pie before cutting into it. This meringue does weep but mom never cared because the pies never lasted that long anyway... LOL.

1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
¼ teaspoon salt
1?½ cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
  • To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
  • Bake in preheated oven for 10 minutes, or until meringue is golden brown.

  • For the crust: Preheat the oven to 400°. Roll 1 ball of pie dough into a 13-inch circle on a lightly floured surface. Transfer the crust to a 9-inch pie plate. Tuck the edges of the crust under to be even with the edge of the pie plate and crimp. Place the crust in the refrigerator for 60 minutes (or freezer for 30 minutes). Press a piece of plastic wrap onto the surface of the filling, then cool in the refrigerator for 2 hours. For the meringue: Place a medium saucepan filled with 1-inch of water over medium heat and bring to a simmer. In the bowl of a stand mixer, whisk together the egg whites, vanilla, sugar, salt, and cream of tartar. Place the mixing bowl over the simmering water and continue to mix, scraping the sides of the bowl frequently with a rubber spatula so that the egg whites don’t cook, until the sugar has dissolved into the egg whites, 3 to 5 minutes. (When you rub some of the mixture together in your fingers, you should not feel any texture/sugar granules. If using a thermometer, the temperature should read around 160°.) Transfer the bowl to a stand mixer fitted with a whisk attachment and whisk on medium-high speed for 4 to 5 minutes, until the meringue is glossy and holds a medium-stiff peak. Dollop the meringue over top of the pie to completely cover the lemon filling and swirl with the back of a spoon to make decorative swoops and swirls. Toast the meringue with a kitchen torch or place under a broiler (about 8 inches from the broiler element heated to high heat) for 1 minute, until lightly toasted. Let cool completely to room temperature, then serve.
