Total Time 8 hr (includes chilling)

Cook Time 30 min

Yield 10 servings

Number Of Ingredients 16

1 teaspoon finely grated fresh lemon zest
1/2 cup fresh lemon juice
1/2 cup sugar
3 large eggs
1/2 stick (1/4 cup) unsalted butter, cut into small pieces
1 1/3 cups finely ground graham cracker crumbs (5 oz)
1/3 cup sugar
1/8 teaspoon salt
5 tablespoons unsalted butter, melted
3 (8-oz) packages cream cheese, softened
1 cup sugar
3 large eggs
3/4 cup sour cream
1 teaspoon vanilla
Accompaniment: blueberries
a 9- to 91/2-inch (24-cm) springform pan

Steps:

  • Whisk together zest, juice, sugar, and eggs in a 2-quart heavy saucepan. Add butter and cook over moderately low heat, whisking frequently, until curd is thick enough to hold marks of whisk and first bubbles appear on surface, about 6 minutes.
  • Force lemon curd through a fine-mesh sieve into a wide shallow dish, scraping bottom of sieve, then cover surface with wax paper. Cool completely, stirring occasionally, about 30 minutes.
  • Put oven rack in middle position and preheat oven to 350°F. Invert bottom of springform pan (to make it easier to slide cake off bottom), then lock on side. 3Stir together crust ingredients in a bowl, then press onto bottom and 1 inch up side of springform pan. Place springform pan in a shallow baking pan and bake 10 minutes, then cool crust completely in springform pan on a rack.
  • Reduce oven temperature to 300°F.
  • Beat together cream cheese and sugar in a bowl with an electric mixer at medium speed until smooth, 1 to 2 minutes. Reduce speed to low and add eggs 1 at a time, beating until incorporated. Beat in sour cream and vanilla until combined.
  • Pour two thirds of cream cheese filling into crust, then spoon half of lemon curd over filling and swirl curd into filling with a small knife. (Avoid touching crust with knife to prevent crumbs getting into filling.) Repeat with remaining filling and curd.
  • Bake cheesecake until set 1 1/2 inches from edge but center trembles when pan is gently shaken, about 45 minutes. (Center of cake will appear very loose but will continue to set as it cools.) Transfer springform pan to a rack and immediately run a knife around top edge of cake to loosen. Cool completely, about 2 hours, then chill, uncovered, at least 4 hours. Remove side of springform pan before serving.

Number Of Ingredients 16

3 sticks (339 g) unsalted butter, softened
3 cups (600 g) sugar
5 large eggs, room temperature
3 cups (375 g) * All Purpose Flour* (not self-rising)
1/2 teaspoon (2 g) baking powder
1/2 teaspoon (3g) salt
1 cup (242g) sour cream
1/4 cup lemon juice (approx amount in one small lemon)
zest of one lemon
1 teaspoons (4g) vanilla
2 teaspoon (8 g) lemon extract
1 1/2 cups Blueberries (fresh or frozen)
1 cup powdered sugar (sifted)
1-2 Tablespoons fresh lemon juice (adjust amount as needed for desired consistency)
zest of one lemon
pinch of salt

Steps:

  • Preheat oven to 325 degrees F and grease and flour a bundt pan.
  • In a separate bowl whisk the all purpose flour, baking powder, and salt to combine, set aside for later.
  • Cream the butter with the paddle attachment in your mixer, gradually add the sugar and beat until light and fluffy 3 to 5 minutes.
  • Add the eggs one at a time blending after each to incorporate.
  • In a small bowl or measuring cup, add the sour cream, lemon juice, lemon zest, vanilla extract, and lemon extract.
  • While mixing on low speed, add the flour mixture alternately with the sour cream mixture to the butter, sugar, & egg mixture. Begin and end with the dry ingredients. (I add the flour mixture three times and the sour cream mixture twice). Increase the speed to medium and mix until incorporated. Be careful not to over-mix, and don't mix above medium speed.
  • Fold in the blueberries
  • Bake at 325 degrees for 60-70 minutes if using fresh blueberries. Baking times may increase 10-15 minutes or more if using frozen blueberries. Check on the cake as it nears the 1 hour mark and adjust additional time as needed. When an inserted toothpick or skewer comes out clean or with just a few moist crumbs attached, it is ready.
  • This recipe makes approximately 8-8.5 cups of batter.
  • Combine sugar, lemon juice, and a pinch of salt in a small bowl and stir until smooth.
  • Drizzle over the pound cake. (I spooned mine into a piping bag with the tip snipped away for more control.) Sprinkle lemon zest over the top. If the glaze is too thin, add a bit more powdered sugar. If it is too thick, add a bit more juice or a touch of milk.
  • Garnish with a sprinkling of lemon zest.

Place in center of pan with about 1/2 inch to inch of water). I think this way is best, as when I put the pan of water a rack under the pie it seems to crack. I use a knife for doneness as a topping goes on this anyway. FINISHING: Sour Cream topping: 1/2 cup sour cream, 1-2 tspn sugar, real lemon juice, lemon …

No. I enjoyed the ‘2nd’ recipe quite a bit more as far as taste & texture using 1 cup of heavy cream. Not sour cream. Because it needs to be room temperature, too, like the eggs & cream cheese. Sour cream has 0 flavor & turns to a more “watery” consistency. Heavy cream …
