fresh breadcrumbs

cooked skinless turkey, roughly chopped

100 g

smoked streaky bacon, roughly chopped 

1 tbsp.

wholegrain mustard

1

garlic clove, crushed 

1 tbsp.

runny honey

1

medium egg, beaten 

1 tbsp.

vegetable oil

thick slices Brie, about 50g total

4

brioche buns, split

2 tbsp.

light mayonnaise

4

soft round lettuce leaves

3 tbsp.

cranberry sauce 

Steps:

  • 1 Mix breadcrumbs and milk in a large bowl and set aside to soak. Pulse turkey and bacon in a food processor until itresembles mince. Empty into breadcrumb bowl and mix in mustard, garlic, honey, egg, 1/2tsp fine salt and plenty of freshlyground black pepper.2 Shape into 4 even patties about 11/2cm (2/3in) thick. Arrange on a plate, cover and chill for 30min to firm up.3 Preheat oven to 200°C (180°C fan) mark 6. Heat oil in a large frying pan over medium heat and brown burgers for 5min, turning halfway. Transfer to a baking tray and cook in oven for a further 8-10min, or until cooked through. Remove tray from oven and preheat grill.4 Top burgers with Brie. Add buns to tray, cut-side up; grill for 1-2min, until toasted and cheese is starting to melt (grill bunsseparately if too crowded). Spread mayonnaise on bottom buns; top with a lettuce leaf, the burgers, some cranberrysauce and the top bun. Serve.

1 tablespoon vegetable oil
2 tablespoons all-purpose flour
½ teaspoon salt
? teaspoon ground black pepper
2 cups half-and-half cream, divided
1 cup cooked, chopped turkey meat
1 teaspoon finely chopped onion
1 cup dry bread crumbs
? cup crushed cornflakes cereal
1 (10.75 ounce) can condensed cream of chicken soup

Steps:

  • Heat oil in a large skillet over medium high heat. Blend in flour, salt, pepper and 1 cup of half-and-half. Reduce heat to low and simmer, stirring, until thick. Stir in turkey, onion and bread crumbs. Mix well, then shape mixture into 8 small patties and refrigerate to chill for 30 minutes.
  • Place cornflake crumbs in a shallow dish or bowl and place remaining 1 cup half-and-half in a second shallow dish or bowl. Heat oil in skillet. Dip patties in crumbs, then in cream, then in crumbs again; brown patties in the hot skillet, place in a serving dish and cover with soup.
