This slightly sweet chicken pizza has been a requested meal among my family since coming up with the recipe some years ago. The different flavors work so well together.

1 (15 ounce) can pineapple chunks - drained with juice reserved
2 skinless, boneless chicken breast halves - cut into bite-size pieces
1 teaspoon minced garlic
2 (10 ounce) cans refrigerated pizza crust dough
1 cup teriyaki sauce
1 small sweet onions, thinly sliced
1 cup shredded Cheddar cheese
1 cup crumbled feta cheese

Steps:

  • Combine reserved pineapple juice, chicken, and garlic in a small baking dish. Cover, and refrigerate for 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Remove chicken from pineapple. Saute chicken and garlic in a very hot pan, so that the chicken browns just slightly.
  • Roll out pizza dough on a 16 inch pizza pan. Bake dough for approximately 7 minutes, and then remove from oven. Brush dough with a thin layer of teriyaki sauce, then a layer of the onion, and top with Cheddar cheese. Then top with chicken, reserved pineapple chunks, and feta cheese. Bake for an additional 15 minutes, or until cheese is bubbly and slightly browned.

2 chicken thighs or legs, remove bones if desired
3 tablespoons Soy sauce
3 tablespoons mirin Japanese rice wine
1 tablespoon sugar brown sugar is better
1 tablespoon oil only if pan-frying
1 cup water only if pan-frying

Steps:

  • "Marinade the chicken thighs in soya sauce, mirin & sugar mixture for at least 30 minutes. For maximum flavour, marinade overnight. Oven baking: Preheat oven to 140 degrees celcius. Place chicken with skin down on baking tray. Bake each side for 20 minutes. Brush the leftover marinade over the chicken occasionally for additional flavour. Increase oven temperature to 160 degrees celcius & bake an additional 10 minutes on each side. Cut & serve immediately. Pan-Frying: Heat up 1 tbs of oil in frying pan, Add the chicken, cook till slightly brown before turning to the other side. Add leftover-marinade sauce. Add some water occasionally, just enough so to prevent burning. Add more water once the sauce thickens. Cook chicken. Cut & serve immediately. "
