Thanksgiving Leftover Sweet Potato Muffins Recipe - Food.com image

A great way to use your leftover sweet potato casserole. Yummy and easy because you've already done most of the work. Gret for breakfast the next day or anytime you've got leftover sweet potatoes.

Cook Time 20 minutes

Yield 6 muffins, 6 serving(s)

Number Of Ingredients 5

1 1/2 cups cooked sweet potatoes, from a casserole
1 (7 1/2 ounce) package cornbread mix
1/2 cup milk (or substitute 1/4 cup heavy cream)
1 egg
1/4 cup vegetable oil

Steps:

  • Preheat oven to 400 degrees.
  • Combine sweet potato casserole, egg, milk and cornbread mix.
  • Let sit in bowl.
  • Oil muffin pans and place in preheated oven for about 5 minutes.
  • Remove muffin pan from oven and pour oil into batter.
  • Stir in oil really well.
  • Pour batter into muffin pan filling each one 1/2 of the way full.
  • Bake for about 15-20 minutes.
  • Enjoy.

Don't let your leftovers go to waste! Use your leftover herbs and sweet potato mash to create this creamy and savory take on Fettuccine Alfredo.

Cook Time 20 minutes

Number Of Ingredients 10

1 lbs. of Hy-Vee fettuccine noodles
2 tbsp. of Hy-Vee unsalted butter
1 large shallot
2 clove(s) of garlic
2 tsp. of fresh thyme
2 tsp. of fresh sage
1 c. of leftover mashed sweet potatoes
1.5 c. of Hy-Vee whole milk
1 c. of Hy-Vee finely shredded Parmesan cheese
0 Fresh herbs

Steps:

  • 1.

    Cook fettuccine noodles according to package directions, drain, and keep warm.

  • 2.

    Heat butter in a large skillet over medium heat. Add shallot, garlic, thyme, and sage. Saute until shallots have softened, about 4 to 5 minutes. Stir in leftover sweet potato mash and whole milk, heat through. Stir in Parmesan cheese until melted. Toss sweet potato sauce with fettuccine noodles. Serve, garnished with additional Parmesan cheese and fresh herbs, if desired.
