EASY SALMON PARCELS | JAMIE OLIVER FISH RECIPES
These are simple and elegant – and easy on the washing-up. You could always prep these parcels the evening before, then simply pop them in the oven as soon as you get in the door.

- Preheat the oven to 200ºC/400ºF/gas 6.
- Melt the butter in a non-stick frying pan over a medium heat. Cut out four 40cm squares of greaseproof paper and brush with a little melted butter. Trim the leeks, then julienne or cut into matchsticks and sauté in the butter for 6 to 8 minutes, or until lightly golden. Season well.
- Divide half of the leeks between the paper. Place a salmon fillet on each, season, and spoon over 2 tablespoons of vermouth, 1 tablespoon of stock and the remaining leeks. Scatter over the capers. Finely chop and scatter over the dill. Fold up the sides of the paper and scrunch up to make secure parcels.
- Place the parcels on a baking sheet and cook for 15 minutes, or until the salmon is cooked. Open the parcels at the table.

- Transfer the leeks to an oiled ovenproof pan if your skillet cannot go under the broiler. Using tongs, turn the leeks so that the flat side is up. If there is still a lot of liquid in the pan, pour it off. Sprinkle the Parmesan over the leeks. Place under the hot broiler until the cheese has melted and is beginning to color. Remove from the heat and serve.

Preheat the oven to 180 degrees
Cook the salmon en papillote, with some olive oil, clove garlic, squeeze of lemon and season with salt and pepper to taste, for 15 minutes
Boil the pasta for 15 mins until al dente
Cook the leeks in the butter and garlic, once softened season and add the flour to coat all the leeks
Add the milk a little at a time until you have a thick creamy sauce, now add the yogurt and mustard along with the parsley and mint and stir well – season well with black pepper
Add your cooked pasta to an oven proof dish, then add the salmon layer, flaking across all the pasta removing any bones.
Now add the creamy leeks over the top covering right to the edges
Sprinkle over the breadcrumbs and season lightly again
Put this in the oven until golden brown on top – about 15 minutes should do the trick!
