It’s just flour, water, and oil. Worked there 20 years ago it was 8 scoops of flour (don’t remember the size, but it’s the big restaurant size scoops) and 2:1 water/oil ratio. Think 4 qts water and 2 qts oil. Knead by hand in a gigantic bowl. Probably did four or five of those for a busy weekend night, so it’s a lot of dough.
