This is a great dish for pot-lucks. It's easy, and can be made in advance. Add dressing just before serving.

1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
½ (14.5 ounce) package nacho-flavor tortilla chips
2 cups shredded Cheddar cheese
½ (15 ounce) can kidney beans, drained
½ cup ranch-style salad dressing
1 chopped tomato
1 cup chopped lettuce
¼ cup chopped green onion

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium-high heat, stirring to crumble until well done; drain. Stir in taco seasoning mix. Set aside to cool.
  • Place chips into a large bowl, and crush into bite-size pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions. Pour dressing over all, and toss to coat.

2 (16-oz.) cans Old El Paso™ Refried Beans
1 lb. ground beef
1 (1-oz.) package Old El Paso™ Taco Seasoning Mix
3/4 cup water
1 1/2 cups shredded lettuce
6 oz. (1 1/2 cups) shredded Cheddar or Monterey Jack cheese
2 cups Old El Paso™ Salsa
Tortilla chips
Old El Paso™ Chopped Green Chiles
Sour cream
Ripe olive slices

Steps:

  • Spread beans on 14-inch serving platter.
  • In large skillet, brown ground beef over medium-high heat until thoroughly cooked, stirring occasionally; drain. Reduce heat to medium. Stir in taco seasoning and water. Cook and stir heat for 10 to 15 minutes. Spread beef mixture over beans.
  • Top with lettuce, cheese and salsa. Garnish with desired toppers. Serve with tortilla chips.
