This easy, layered pumpkin dessert "lasagna" combines pudding mix, whipped cream, and caramel for the most stunning Thanksgiving dessert ever from Delish.com.

heavy cream

whole milk

(3.4-oz.) packages vanilla pudding mix

1 c.

pumpkin puree

1 tsp.

pumpkin pie spice

graham cracker sheets

1/2 c.

caramel

Chopped pecans, for garnish

Steps:

  • In a large bowl using a hand mixer or in the bowl of stand mixer using the whisk attachment, beat cream cheese and sugar until light and fluffy. Slowly add heavy cream and beat until stiff peaks form. In a medium bowl, whisk together milk, pudding mix, pumpkin, and pumpkin pie spice until smooth and thick. Assemble lasagna: Spread a thin layer of cream cheese mixture in a 9"-x-13" baking dish. Top with a layer of six graham crackers. Add half of pudding mixture and top with half of cream cheese mixture. Drizzle with half of caramel and repeat, ending with cream cheese layer (reserve remaining caramel until ready to serve). Cover loosely with plastic wrap and refrigerate at least 4 hours and up to overnight. Drizzle with remaining caramel and garnish with pecans before serving.

1/4 cup graham cracker crumbs
1 teaspoon sugar
4-1/2 teaspoons butter, melted
FILLING:
3 ounces cream cheese, softened
1/4 cup sugar
1 large egg, lightly beaten
1 teaspoon lemon juice
1/2 teaspoon grated lemon zest
TOPPING:
1/4 cup sour cream
2 teaspoons sugar
1/4 teaspoon vanilla extract

Steps:

  • In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom of a greased 4-in. springform pan. Place on a baking sheet. Bake at 350° for 5 minutes. Cool on a wire rack., In a small bowl, beat cream cheese and sugar until smooth. Add egg; beat on low speed just until combined. Stir in lemon juice and peel. , Pour over crust. Return pan to baking sheet. Bake at 350° for 25-30 minutes or until center is almost set. Remove from the oven; let stand for 5 minutes (leave oven on). , Combine topping ingredients; carefully spread over filling. Bake 5 minutes longer. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan just before serving.
