1 cucumber (about 4 ounces)
1 cup packaged cabbage-and-carrot coleslaw
Half of a small red onion, sliced
1 tablespoon seasoned rice wine vinegar
1 teaspoon chopped pickled ginger, plus 1 ginger juice
1 teaspoon sesame oil
1 piece lavash-style bread (about 10 1/2- x 9-inch piece)
6 ounces sliced deli smoked chicken

Steps:

  • Ribbon cucumber with a vegetable peeler; discard core and tough outer skin. Toss ribbons in a bowl with coleslaw mix, onion slices, vinegar, chopped pickled ginger, ginger juice, and sesame oil to coat. Let stand 10 minutes, stirring occasionally, for flavors to combine.
  • Cut lavash into 4 equal pieces, and line each with one-fourth of sliced chicken; top with one-fourth of salad mixture. Bring sides of lavash together, and spear with wooden picks. Serve.

Make the traditional Armenian lavash bread at home and stuff it with creamy hummus and grilled eggplants for a Middle East-style wrap full of flavour.

Number Of Ingredients 13

200 g of White Flour
160 g of Wholemeal Flour
0.5 tsp of Salt
1 tsp of Instant Dry Yeast
230 mL of Warm Water
0.5 tsp of Maple Syrup (or Brown Sugar)
1 tbsp of Poppy Seeds (optional)
1 tbsp of Sesame Seeds (optional)
270 g of Hummus
120 g of Baby Spinach
3 Large Tomatoes
1 Large Aubergine
Sumac (optional) to taste

Steps:

  • Mix the flours with salt, yeast, lukewarm water and maple syrup in a bowl.
  • Work all into a smooth and elastic dough, kneading it for 5 minutes.
  • Let the dough prove for 40 minutes in a bowl greased with oil and wrapped in cling film.
  • Divide the dough into 6 pieces and then roll them into smooth balls.
  • Let them prove covered for 30 minutes until puffed.
  • Roll out each ball into a thin round flatbread, about 22 cm (9 inches) wide. Then, brush it with water and sprinkle it with poppy and sesame seeds.
  • In a large skillet, cook the bread over high heat for 45 seconds on each side.
  • Spread the hummus over the bottom half of the wrap, and top it with baby spinach, sliced tomatoes, grilled aubergines, and sumac. Roll the wrap and serve sliced.
