Beef and Root Vegetable Stew Recipe | Laura in the Kitchen ... image

Yield Serves 4-6

Number Of Ingredients 16

1 lb of Stewing Meat, cut into bite size pieces
1 Onion, chopped
2 Stalks of Celery, chopped
2 Carrots, chopped
2 Carrots, chopped
2 Small Turnips, peeled and diced
1 Large or 2 small Parsnips, peeled and diced
1 Large Potato, peeled and diced
1 tsp of Dried or Fresh Rosemary
A few drops (about 2 tsp) of Worcesteshire Sauce
3 Tbsp of Tomato Paste
4 cups of Beef Stock
3 Tbsp of All Purpose Flour
3 Tbsp of Olive Oil
Fresh Chopped Parsley
Salt and Pepper, to taste

Steps:

  • 1) In a large pot, add two tablespoons of the olive oil and let it preheat over high heat. 2) Toss the beef with the flour and add it to the hot pot. Make sure the meat is in one layer and allow it to get a nice dark brown color on all sides. 3) Remove the beef from the pan onto a plate and set aside. 4) Reduce the heat to medium and add in the remaining tablespoon of olive oil along with all the chopped veggies. Season them with a little salt and pepper and allow them to cook for about 5 to 7 minutes or until the start developing some color. 5) Add the tomato paste and stir it around to coat the veggies, about 30 seconds. 6) Add the beef back in along with the stock, dried rosemary and worcesteshire sauce. Bring to a boil, reduce the heat to medium low, partially cover the pan with a lid and allow it to cook for about one and half hours or until the meat is super tender. 7) After one and a half hours, remove the lid, turn the heat up to medium high and let the stew cook just a little longer to thicken the sauce a bit. 8) Stir in the parsley and serve it over egg noodles!

  • 1) In a large dutch oven preheated over medium high heat, add the bacon and cook until crisp, remove with a slotted spoon. 2) Add 1 Tbsp of the olive oil to the bacon drippings and add the beef, cooking it for a few minutes or until golden brown on pretty much all sides, remove to a plate with a slotted spoon. 3) If your pan is very dry, add 1 more Tbsp of olive oil and saute the onions, garlic and carrots for a few minutes or until they develop some color. 4) Add the brandy and allow it to cook out for about a minute, stir in the tomato paste and allow that to cook for about 30 seconds while stirring the whole time. 5) Add the beef back in along with the wine, beef broth, cooked bacon and thyme. Cover with a lid, turn the heat down to low and let it cook for about 2 hours or until the beef is tender. 6) Right before the beef mixture is done, saute the mushrooms. 7) In a skillet, add 1 Tbsp of olive oil and the 1 Tbsp of butter, let it melt over medium high heat, add the mushrooms and saute them for 5 to 7 minutes or until golden brown all over, season slightly with salt and pepper to taste and fresh chopped parsley, set aside. 8) Remove the lid from the pan, add the cooked mushrooms and pearl onions, turn the heat up to high and let everything bubble together for a few minutes or until thickened. Adjust the seasoning to taste and serve!
