Classic tomato spaghetti | Jamie Oliver pasta recipes image

This pasta sauce takes minutes to cook.What’s great about this recipe for beginner cooks is that once you’ve done it a few times you can add other simple ingredients to your basic tomato sauce to completely transform it. Check out the end of the recipe, where I’ve given you some ideas to get you started.

Number Of Ingredients 7

2 cloves of garlic
1 fresh red chilli
1 bunch of fresh basil (30g)
300 g dried spaghetti
olive oil
1 x 400 g tin of quality plum tomatoes
80 g Parmesan cheese

Steps:

    1. Peel and finely slice the garlic and chilli (halve and deseed it first if you don’t want the sauce too hot).
    2. Pick the basil leaves off the stalks and put to one side. Finely chop the stalks.
    3. Cook the spaghetti in a large pan of boiling salted water according to packet instructions.
    4. Meanwhile, put a large saucepan on a medium heat and add 2 good lugs of oil. Add the garlic, chilli and basil stalks and give them a stir.
    5. When the garlic begins to brown slightly, add most of the basil leaves and scrunch in the tomatoes. Turn the heat up high and stir for 1 minute. Taste and season with sea salt and black pepper, if needed.
    6. Drain the spaghetti, reserving a mugful of cooking water, then transfer it to the pan of sauce and stir well. Add a splash of pasta cooking water to loosen, if needed, then taste and season to perfection.
    7. Divide the pasta between bowls, or put it on the table in a large serving dish and let everyone help themselves.
    8. Roughly tear over the remaining basil leaves and finely grate over the Parmesan.

My mother-in-law gave me this tomato gravy recipe. It's her very favorite breakfast. We—my husband, our two sons and I—also enjoy it for a light supper. Especially on a cold day, it's great with warm peach cobbler or bread pudding. —Laurie Fisher, Greeley, Colorado

Number Of Ingredients 8

1/2 pound bacon strips, diced
1 small onion, chopped
2 tablespoons all-purpose flour
1/8 teaspoon salt
Pinch pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
3 cups tomato juice
8 hot biscuits, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan.
    Add onion to drippings; cook and stir over medium-high heat until tender, 3-5 minutes. Stir in flour, salt and pepper until blended; cook and stir over low heat until mixture is golden brown (do not burn). Gradually whisk in tomato juice. Stir in tomatoes. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until thickened, 10-15 minutes, stirring occasionally. Stir in bacon. Serve over biscuits.
